An easy feast! A delicious main dish stew and endless salad recipe that you won't have to worry about seasoning
Hello. I am Ayumi Nakaganji, a chef.
As the weather is getting cooler, we would like to introduce a main stew dish and a simple salad that goes well with it.
The key to this stew is beans.
The other day, a friend of mine said, "As I get older, I've started to like beans," and I agree. I used to think, "Boiled beans are a drag," but now in my 40s, I've started to realize how delicious beans are. They're high in protein and low in fat, which is nice. If you use canned beans, you can make a delicious dish in no time.
1: No complicated seasoning required! "Mixed beans and sausage stew"
This time, we'll make a simple dish using canned boiled mixed beans. You can also make this dish using white beans, red beans, lentils, or other beans on their own.
[Ingredients] (Serves 2)
Mixed beans (boiled)・・・240g (1 can)
Sausage (large)・・・2 pieces (100g)
Onion・・・1/2
Garlic (coarsely chopped)...1 tablespoon
Salt...appropriate amount
Water (use the cooking liquid from the can if you have it)...300ml
2 bay leaves
Herbs such as rosemary and thyme - appropriate amount if available (dried or fresh is fine)
Black pepper...appropriate amount
Olive oil... a moderate amount
Baguette... appropriate amount
<How to make>
(1) Coarsely chop the onion. Combine the broth from the canned beans with water and make 300 ml.
(2) Add a little olive oil to a pan and brown the sausages on both sides, then remove them from the pan (note: it is okay not to cook them completely at this stage).
(3) Add garlic, onion and a little salt to the same pot and sauté.
(4) When the onions have softened, add the mixed beans, the combined broth and water, the bay leaf, the other herbs, and the sausages, and simmer uncovered for 20 minutes. Skim off the scum that will appear during the cooking process.
(5) Season with salt. Serve in a serving dish, sprinkle with black pepper, drizzle with olive oil, and serve with baguette.
The bean cooking liquid contains salt, so I think it will be fine to just add a little salt at the end to season it.
By the way, the sausage I used is fresh frankfurters sold at Gyomu Super. It has a strong flavor and is made from fresh meat, so it makes a very delicious soup. It's filling and great value for money. Of course, you can use regular sausages, but if you choose larger ones, I think it will feel more like a main dish.
2: Eat unlimited lettuce! "Spanish Lettuce Salad"
Although it is a very simple salad, you can eat a lot of it. It is the perfect snack to go with some chilled white wine. If you find any delicious-looking lettuce, be sure to give it a try!
[Ingredients] (Serves 2-3)
Lettuce・・・2/3 to 1 head
Garlic...2 cloves
1 tablespoon white wine vinegar (or grain vinegar if not available)
2 lemons (sliced into wedges)
Salt...appropriate amount
Black pepper...appropriate amount
Olive oil...2 tablespoons
<How to make>
(1) Remove the core of the lettuce, tear it into large pieces with your hands, place it in cold water, drain, and allow it to crisp up (if you have time, place it in the refrigerator to make it even crisper). Thinly slice the garlic.
(2) Place lettuce in a bowl.
(3) Sprinkle white wine vinegar and salt on (2).
(4) Add olive oil and garlic to a frying pan and heat. Deep fry the garlic until golden brown, being careful not to burn it.
(5) Pour (4) over (3), sprinkle with black pepper, and serve with a squeeze of lemon.
Garlic burns easily, so if you put it in a frying pan with olive oil and then heat it, you will have fewer mistakes. Be careful not to use too high a heat. Keep an eye on it as you heat it slowly.
I used white wine vinegar, but I also recommend using sherry vinegar or balsamic vinegar.
Choose lettuce that is loosely rolled and fluffy.
