Epi opened in August 2025 in the Minojima area south of Hakata Station, where new sensibilities live among the old streets.

This is a noteworthy bakery shop run by chef Nakahara Shuhei, who trained at the famous Hakozaki bakery "Pan Stock."

Nakahara is an experienced chef who has gained experience in Western and French cuisine over approximately 14 years working as a chef at a hotel and as a chef at the official residence.
After deciding to become a baker, he trained at "Pan Stock" for about five years before finally opening "epi."

The store's name, "epi," means "ear of wheat" in French. The word was chosen because it evokes happy images of "harvest" and "bountiful harvest."

The shop is located on the first floor of a modern, urban designer apartment building that stands out even in the Minojima area.
The interior of the restaurant is a flat space with no separation from the kitchen, and the solid wood shelves stand out against the exposed concrete walls, creating a minimalist and sophisticated appearance.

The shelves are lined with around 30 to 40 different types of bread, ranging from everyday breads such as "Baguette" (216 yen) and "Focaccia" (324 yen) to satisfying prepared meals and sweets.

Even breads with familiar names have been transformed into unique and sophisticated dishes through the unique ingenuity of Nakahara, a chef with a French background.

Nakahara says that he is "conscious of the aroma and texture" of the dough, which is made using domestic wheat from Hokkaido and Kyushu, and is attractive for its wide range of expressions, from crisp hard types to chewy soft types.

Making use of his experience as a chef, he makes most of the fillings, such as cream, in-house, resulting in original, deep flavors.

Mentaiko French Fries
Since opening, epi's signature item has been the Mentaiko French Bread (432 yen), which uses a highly hydrated baguette.

The golden brown baguette is crispy on the outside and chewy on the inside.
The homemade mentaiko paste is generously spread all the way to the edges, and with one bite, the spiciness and umami of Spicy Fish Eggs spreads throughout your mouth.
Red bean paste butter
"Anko Butter" (270 yen) is a fragrant hard bread made with black tea and walnuts, filled with a generous amount of thick, homemade bean paste.

You can enjoy a luxurious taste with the rich and fragrant flavor of creamy butter, which is made using the French technique of "burnt butter."
Walnut Raisin Cream Cheese
Another recommended item is the "Walnut Raisin Cream Cheese" (378 yen), which has several types of yeast mixed into the dough.

The rich aroma and juicy acidity of raisins, the rich flavor of cream cheese, and the soft, chewy dough combine to create a deep flavor.
Apple Pie
The classic "Apple Pie" (378 yen) has a unique crunchy texture, achieved by intentionally reducing the number of folds in the pie.

The sweet-smelling dough is filled with rich butter and smooth cream, bringing out the apples' subtle acidity and texture.
Cajun Chicken and Egg Roll Sandwich
The "Cajun Chicken and Egg Roll Sandwich" (486 yen) is a roll sandwich featuring fragrant chicken marinated in spices.

Juicy chicken and egg salad is accented by the refreshing tomato and lettuce, creating a well-balanced flavor.

Pizza bread with salsiccia, chrysanthemum, and mushrooms
"Pizza Bread with Salsiccia, Crown Chrysanthemum, and Mushrooms" (432 yen) is based on chewy dough and rich béchamel sauce.
