This time, we will be introducing a Japanese restaurant that is opening in Kyushu for the first time, located at Hakata Station.
Opening at City Dining Kuten on December 9, 2025! Kyushu's first store, Ginshari to Dashi Chazuke Kama no Usagi (Hakataeki Chuo-gai, Hakata Ward, Fukuoka City)
"Gin Shari to Dashi Chazuke Kama no Usagi" will open on Tuesday, December 9th, 2025 on the 10th floor of City Dining Kuten at JR Hakata City, directly connected to JR Hakata Station!
This restaurant serves "Gin Shari" rice, carefully cooked one by one in a hagama pot, and "Dashi Chazuke" set meals that bring out the flavor of the ingredients. This is the first time it has arrived in Kyushu.
Since rabbits are considered a symbol of fertility, the name "Kama no Usagi" was chosen to evoke the image of an abundant harvest of rice.

We offer a wide selection of satisfying lunch and dinner meals, as well as sake, snacks to go with the drinks, and sweets.

The flavor is different! "Ginshari" is cooked individually in a kamado pot.

Their signature product, rice, is carefully selected for its special cultivation and origin. It is procured directly from farmers and cooked carefully in a kamado (Japanese rice cooker).
The strong heat, moderate pressure, and heat convection generated by the spherical shape allow for efficient heating, resulting in glossy rice.
Each grain is firm and you can taste the sweetness with every bite.
"Marinated Yaki" - a dish that goes well with rice!
A side dish to accompany the rice cooked in the kamado is "tsukeyaki," which is fish or meat marinated in fermented foods such as miso or koji.
The flavor of the ingredients stands out, making it a dish that will make you want to eat more and more rice.
Finally, enjoy it as "dashi chazuke."

A refined golden "dashi" made by blending chicken stock with Japanese-style dashi, which is made by adding the aroma and richness of kelp, dried sardines, dried bonito flakes, mackerel flakes, and bonito flakes, and adjusting the flavor with sake, mirin, white soy sauce, and roasted salt to bring all the ingredients together.
Pairing it with rice and marinated grilled fish brings out a new charm.

The "Gindara Saikyo-yaki and Sea Bream Sesame Sauce Gozen" (2,680 yen) allows you to enjoy the luxurious combination of gindara Saikyo-yaki and sea bream sesame sauce all at once.

This dish is made with fresh red sea bream and a rich sesame sauce with several kinds of nuts, and is served first with freshly cooked silver rice, then topped with dashi.
In addition to the Nishikyo-yaki and sesame sauce, the set also includes Hagama "Gin Shari", two kinds of side dishes, chawanmushi, spicy Spicy Fish Eggs, and dashi stock.
Kyushu barley miso grilled chicken and marinated tuna set meal
This is the "Kyushu Barley Miso Grilled Chicken and Marinated Tuna Gozen" (2,160 yen).

The set includes grilled chicken with Kyushu barley miso and marinated tuna, along with Hagama "silver rice," two types of side dishes, chawanmushi, spicy Spicy Fish Eggs, and dashi stock.
Luxury stone-grilled Wagyu beef meal
The special meal "Luxurious Stone-Grilled Wagyu Beef Meal" (3,500 yen) is particularly luxurious.

This luxurious dashi chazuke meal features three luxurious dishes: grilled Wagyu beef on a stone, sea bream with sesame sauce, and grilled silver cod in Kyoto style, all served with freshly cooked silver rice.
In addition to stone-grilled Wagyu beef, sea bream with sesame sauce, and grilled silver cod in Kyoto style, the set also includes hagama "ginshari," one type of obanzai (side dish), chawanmushi (steamed egg custard), takana (green mustard), and dashi stock.
A luxurious meal of grilled Wagyu beef, shrimp and vegetable tempura
This is also a special meal, "Luxurious meal of stone-grilled Wagyu beef, shrimp and vegetable tempura" (3,280 yen).
