Sumiyoshi Japanese Restaurant Koga is a famous Japanese restaurant run by Keisuke Koga, the son of a family that runs a fishmonger at Yanagibashi Rengo Market, Hakata's kitchen. It's about a seven-minute walk from Watanabedori Station on the Fukuoka City Subway Nanakuma Line, and is close to Sumiyoshi Shrine and Canal City Hakata.

Normally, the restaurant is only open for dinner, but to promote the appeal of the rare and mystical pine mushroom, it is open for lunch (reservations required) for a limited time (end date undetermined).

This "matsukinoko" is a type of shiitake mushroom that was developed over a period of 20 years in Sera Town, Hiroshima Prefecture. The harvest volume is very low, about 1/400 of that of shiitake mushrooms, and it is a highly valued and rare ingredient that is hardly distributed in the Kyushu market.

It looks like a matsutake mushroom and has a unique texture with a crunchy stem and a plump cap. It is also attracting attention for being extremely nutritious.

An amazing texture! A new sensation of "Motsunabe" served with pine mushroom broth
This time we had the "Matsukinoko Motsunabe" (3,960 yen/5,500 yen per person *reservation required), a lunch-only dish that combines Fukuoka's specialty "motsunabe" with matsutake mushrooms. The set includes matsutake mushroom motsunabe, champon noodles to finish, matsutake mushrooms grilled in foil and butter, pickles, and matsutake mushroom nigiri sushi. The 5,500 yen set also comes with a sashimi platter.
The main hot pot we have selected is "Matsumuki motsunabe," but you can also choose from "Matsumuki sukiyaki," "Matsumuki motsunabe with sudachi aroma," and "Matsumuki bulgogi-style sukiyaki."

What was brought to our table was a luxurious hot pot filled with plenty of pine mushrooms...! The mellow aroma of pine mushrooms wafted through the air, whetting our appetite.

What surprised me most was the broth. The broth for the hot pot is made from pine mushrooms, so the soup has a surprisingly refined and gentle flavor.
The rich flavor of the fresh, jiggly Wagyu beef offal combined with the delicate flavor of the pine mushrooms creates a deep, mature taste.

It is excellent not only as a soup stock ingredient, but also as an ingredient.
The pine mushroom has a crisp stem and a plump cap, giving it a pleasant and addictive texture.
The final dish of the meal, champon noodles, absorbed this special broth, giving it an even more luxurious taste!

This is "Mushroom Sukiyaki" made with Wagyu beef loin. The luxurious flavor of Wagyu beef loin harmonizes with the delicate umami of "Mushrooms." Finish off with udon noodles.

"Sudachi-scented Matsumushroom Motsunabe" is a new sensation with the refreshing aroma of sudachi. You can enjoy the refreshing aroma of sudachi as a "refreshing motsunabe." The flavor and texture of the "matsumushroom" is so rich it is reminiscent of matsutake dobinmushi. Finish with soba noodles.

And here is "Matsumushroom Bulgogi-style Sukiyaki." This hot pot is made with pine mushrooms and colorful imperial medicinal bulgogi, and is a masterpiece that allows you to enjoy the texture and deep flavor of the well-seasoned pine mushrooms. Served with egg yolk. Finish off with cheese udon.

Flavor as good as matsutake mushrooms! An excellent side dish included in the set
All hot pot sets come with "Pine mushrooms baked in foil and butter" and "Pine mushroom nigiri sushi," which allow you to directly experience the charm of pine mushrooms.

"Pine mushrooms baked in foil with butter" is made with slightly salty butter and a secret soy sauce broth that permeates the "pine mushrooms." I was able to fully enjoy the difference between the crispness of the stems and the firmness of the caps, which are not lost even when heated. It's a simple dish, so you can really taste the original flavor of the "pine mushrooms."

The nigiri sushi is made with slices of grilled matsutake mushrooms, and the rice is also flavored with matsutake mushroom broth.
When you put it in your mouth, the moderate saltiness and gentle acidity spread, along with an elegant and delicate flavor that is reminiscent of matsutake mushrooms in earthenware pot.
