This time we will be introducing Hakata Non-Tonkotsu Naohito, a ramen shop that opened on October 7, 2025. In Hakata, which is known for its strong image of pork bones, this shop is making waves with its elegant ramen, which is "non-tonkotsu" and uses ingredients such as blackthroat seaperch and chicken!

"Hakata Non-Tonkotsu Naohito" is located in "Hakata Men Kaido" on the second floor of "Hakata Daito", which is directly connected to JR Hakata Station.

It is a sister store of "Ramen Naohito" in Watanabedori, Fukuoka City, and "Hi Tonkotsu Naohito" in Sumiyoshi, and has been attracting attention even before it opened.

I visited around 2pm on a weekday, and there was a line, but the turnover was fast, so I was able to get in right away.

The restaurant has not only counter seats but also many table seats, making it convenient for families and groups.

A new sensation! Try the "Chicken Broth, Nodoguro Kelp Water Tsukemen"

The ramen here is made with ingredients such as blackthroat seaperch and chicken, and has a clear, elegant soup. The thin, flat noodles are made from whole wheat flour, and the ramen is topped with rare roast pork, specially made bamboo shoots, and the aroma of truffles adds to the flavor, making it a truly exquisite bowl of ramen.

The dish I'm looking forward to this time is the "Chicken Broth, Blackthroat Seaperch, and Kelp Water Tsukemen" (1,350 yen), which is limited to 30 servings per day.

Even though it's tsukemen, the noodles are served soaked in the cold Nodoguro kelp water soup, which is very refreshing! The kelp water is very clear, and it looks elegant.

First, I took a bite of the noodles. Perhaps it was the stickiness of the kelp, but they were surprisingly smooth and went down smoothly - a new sensation! The chewy, thin, flat noodles made from whole wheat flour, combined with the umami of the kelp, went down easily.

When you dip these noodles in the warm chicken broth dipping sauce...you'll experience a luxurious taste that combines the rich flavor of chicken with the refined taste of nodoguro!

The kelp water was cold, so the temperature difference between it and the warm dipping sauce was pleasant, and I finished the whole thing in no time!

Enjoy the Nodoguro Dashi Shio Nigiri set with all the Nodoguro you can eat!

Along with the tsukemen, I ordered the side dish "Nodoguro Dashi Shio Nigiri" (200 yen for the set, 250 yen for the single item).

As soon as you put it in your mouth, the pleasant aroma of Nodoguro gently wafts through your nose. This aroma is irresistible! The flavor of the soup stock, which is packed with the umami of Nodoguro, is thoroughly absorbed into the rice, and the saltiness is just right.

The rich flavor of the tsukemen and the light taste of the shio nigiri go together perfectly! Be sure to try them both together.

In addition, there are great value set menus available, where you can add your favorite noodles to "Spicy Fish Eggs rice" or "5 gyoza and white rice" for an additional 380 yen.
