This time, we will introduce a famous udon restaurant located in Yakuin, Chuo Ward, Fukuoka City.
Manda Udon Yakuin Main Branch (Yakuin, Chuo Ward, Fukuoka City), a popular restaurant belonging to the Buzen Urauchi Association
Manda Udon Yakuin Main Branch is located a 3-minute walk from Exit 1 of Yakuin Odori Station on the Nanakuma Subway Line, a 10-minute walk from Yakuin Station on the Nishitetsu Line, and near Yakuin Mutsukado.
This popular restaurant is part of the Buzen Urauchikai school of hand-made udon, a name only available to those who have trained at the head temple, Tsudaya Kanbei (Tsudashinmachi, Kokuraminami Ward, Kitakyushu City). It boasts chewy, thin noodles that are a world apart from the "thick, soft" image of Fukuoka udon, and a flavorful broth made from a unique blend of Rausu kelp, bonito flakes, dried mackerel, and dried sardines.

The interior of the restaurant is a calm space with a white base, and there are counter seats as well as table seats.
The terrace seating, surrounded by greenery, is a stylish space that feels like a cafe.

The translucent, chewy homemade noodles are addictive! Delicious "Burdock Tempura with Grated Daikon" and "Beef Offal Tempura Bukkake"
When you look at the menu, you'll be surprised at the variety!
In addition to "Udon (Hot)" such as "Niku Gobo Ten" (1,200 yen) which is enjoyed in a warm broth, there are "Bukkake (Hot/Cold)" such as "Manda Bukkake" (1,200 yen) topped with premium burdock tempura, grated yam, and a soft-boiled egg, "Kamaage (Hot)" where freshly boiled noodles are served in a bowl with the cooking broth, "Kamatama (Hot)" where freshly boiled udon noodles are mixed with an egg, and "Zaru (Cold)" which is served tsukemen style. There are over 40 types of udon noodles available, categorized by their type.

In addition, seasonal limited menu items are also introduced. They are always a hot topic, and the owner says that one in four customers order a seasonal menu item.

There were so many options that it was hard to choose, but on this day I ordered the "Burdock Tempura with Grated Daikon" (950 yen) and "Beef Offal Tempura Bukkake" (1,500 yen), both served cold.

Tempura grated burdock
First up is the classic dish "Burdock Tempura with Grated Shake" (950 yen), which can be enjoyed all year round. Beautiful noodles topped with a generous amount of premium domestic burdock tempura! It's also topped with grated shaved seaweed, spring onions, ginger, bonito flakes, and nori seaweed. Pour the broth generously over it and enjoy!

In pursuit of transparency and a chewy texture, the noodles are aged using a unique method, cut and boiled after an order is placed, and are made in-house. The water content, temperature, and cooking time of the noodles are also changed depending on the climate.
The noodles are thin but chewy, with a wonderfully smooth texture! The noodles are rinsed in cold water, which gives them an extra chewy texture.

The freshly fried burdock tempura had a thin batter and was incredibly crispy. It had a nice aroma and the umami of the burdock was really strong.

Beef tripe tempura topping
This is the "Beef Offal Tempura Bukkake" (1,500 yen), which can be enjoyed for a limited time until around the end of November 2025.

It was my first time eating beef tripe tempura, and the contrast between the fluffy tripe and the crispy batter was excellent.

The slightly spicy sauce is so delicious you'll become addicted to it.
For those who want to add even more spiciness, there is an original condiment from "Buzen Urauchikai" on the table, which is made by grinding chili pepper into a finer powder and is free to use as you like.

I tried the Yellow Yuzu Pepper, and the refined, refreshing spiciness was immediately apparent, and the taste changed dramatically with just one shake.
It's available in stores, so you can enjoy it at home too.

The "Kashiwamusubi" (200 yen) that I ordered as a single item had large ingredients and was the perfect accompaniment to the udon.

There was also a wide selection of rice dishes available, such as the "Mini Soft-Boiled Egg Tempura Bowl" (350 yen) and the "Mini Pork Cutlet Bowl" (550 yen).
It's a restaurant that makes you want to return again and again and try different things.
By the way, they are planning to open a Tenjin store in ONE FUKUOKA BLDG. (One Building) on October 21, 2025. I'm looking forward to that too!
