This time, we will introduce a new and much talked about store, a sister store of the popular Fukuoka bakery "Moropan."

Opening in August 2025! Tiramisu melon bread and egg tart specialty store "MOROBAAU" (Daimyo, Chuo-ku, Fukuoka City)

MOROBAAU opened on August 3, 2025, located across from Fukuoka City Chuo Ward Office, about a 2-minute walk from Exit 3 of Akasaka Station on the Subway Airport Line.

This takeout specialty shop is known for its tiramisu melon bread and egg tarts.

The owner is pastry chef Tetsuya Matsuoka. He worked as a pastry chef in Fukuoka from the age of 18 to 24 when he was scouted by a modeling agency and moved to Hong Kong. He then returned to Hong Kong as a pastry chef, gaining 11 years of experience, and now operates eight stores in Hong Kong and China.

When MOROPAIN, a popular bakery in Minami-ku, Fukuoka City, opened a Hong Kong store in January 2025, Matsuoka met MOROPAIN owner Yuji Moronaga, and they began working together to develop products for the Hong Kong store.

The result was the creation of "Tiramisu Melon Bread," a hybrid bread and dessert product made by sandwiching tiramisu between melon bread made by "Moropan."

It became a hot topic in Hong Kong as an evolved version of the Hong Kong specialty "Bolo Bau" (which means pineapple bun because of its appearance), and was re-imported to Japan.

The store's name, "MOROBAAU," is a combination of "Moropan" and "Borrowbau." His current goal is to open stores all over the world.

The showcase is lined with a colorful array of "Tiramisu Melon Bread" - a gorgeous sight!

Currently, six types are available: "Tiramisu Melon Bread" (640 yen), "Milk Tea Tiramisu Melon Bread" (660 yen), "Matcha Tiramisu Melon Bread" (660 yen), "Pistachio Tiramisu Melon Bread" (700 yen), "Chocolate Tiramisu Melon Bread" (680 yen), and "Mango Tiramisu Melon Bread" (680 yen).

Another signature product, the egg tart, was as popular as the tiramisu melon bread at the MOROPAIN Hong Kong store.

There are five types available: "Sourdough Egg Tart" (440 yen), "Matcha Egg Tart" (460 yen), "Pistachio Egg Tart" (500 yen), "Chocolate Egg Tart" (480 yen), and "Earl Grey Egg Tart" (460 yen).

Other items on sale include "Palmier" (100g/350 yen, 200g/650 yen) and "Chocolate Pie" (100g/450 yen, 200g/750 yen).

Tiramisu Melon Bread

The most popular item is the "Tiramisu Melon Bread" (640 yen).

We were shown how this special treat is made, a melon bread made with cocoa cookie dough and coated with coffee syrup, sandwiched between a generous amount of tiramisu made with Hokkaido mascarpone, and topped with a sprinkling of cocoa powder.

After the crispy and fluffy texture of the melon bread, the rich flavor of the smooth and creamy tiramisu fills your mouth. The firmness of the tiramisu is carefully adjusted, creating an exquisite balance with the bread.

A flavor that everyone will surely love! The bitterness of the coffee syrup adds a nice accent.

Matcha Tiramisu Melon Bread

The "Matcha Tiramisu Melon Bread" (660 yen) is a full-bodied Japanese treat. The deep flavor of matcha is alive and well, making it a taste for adults.

The tiramisu has a strong cocoa flavor and a sophisticated chocolate taste, which goes perfectly with the melon bread with its powdered sugar.

The strawberry and raspberry syrup adds a subtle tartness, which is also great!

The Tiramisu Melon Breads are all small, but they are delicious and satisfying. They're not too sweet, so you'll probably find yourself eating several.

Sourdough Egg Tart

The most popular egg tart is the sourdough egg tart (440 yen).

Its distinctive feature is the pie dough, which is layered like a mille-feuille.

Apparently, the key point is the natural yeast made from wheat, rye flour and water.

It's filled with rich, delicious custard cream!

Best of all, the crispy texture is so satisfying! According to Matsuoka, this crispness lasts until the next day.

My personal favorite is the "Pistachio Egg Tart" (500 yen).

The texture of the generous amount of pistachios adds a nice accent.

I also liked the balance of the pistachio flavor, which wasn't too strong.

All products are limited in quantity, so they may sell out by early afternoon. We recommend coming in the morning.

Matsuoka is a very ambitious person, and he would like to develop products that match seasonal fruits. We will be keeping an eye on him in the future!
