Hello. I'm Dan!, a family of seven living with my five rescued cats and my flying wife. I'm here to introduce you to the hottest spots in the Fukuoka area.

This time, we will introduce some non-pork bone ramen restaurants, which seem to be increasing in number in Fukuoka.

Supervised by a Tokyo restaurant with long lines! "Chukasoba Ohashi" (Yukuhashi City) to open in 2025

"Chukasoba Ohashi" opened in March 2025, just a three-minute drive from JR Nippo Main Line's Yukuhashi Station, right in front of Yukuhashi City Hall.

This restaurant is fully supervised by Mr. Memoto, the owner of the famous Marue Chinese Noodles restaurant in Sugamo, Tokyo.

Emoto is a talented chef who trained at Tora Shokudo, a restaurant synonymous with Shirakawa ramen in Fukushima. Marue Chuka Soba, which opened in 2020, is a famous restaurant that has lines of people waiting every day and is frequently featured in magazines and on television.

You can now enjoy the flavors of this popular restaurant in Yukuhashi, Fukuoka.

It has become a hot topic, and on the day of the pre-opening, there was a huge queue with people waiting up to two and a half hours.

The restaurant is compact, with four counter seats and two table seats. You purchase your meal ticket from a ticket machine, and you can relax and enjoy your meal in a warm, wood-toned atmosphere.

Attention to detail in soup, noodles, and ingredients

The signature dish is the specially made "high-hydration, extra-thick, flat, curly noodles." The noodles were created through repeated trials with a noodle manufacturer using several types of wheat, germ, and hydration levels, and have a chewy texture that goes perfectly with the soup.

For extra noodles, special thin straight noodles are available, allowing you to enjoy a different texture.

The soup is made by cooking dried sardines, kelp, shiitake mushrooms, and vegetables together, and is characterized by its deep, rich flavor.

This is pork that is prepared in-house over a two-day period.

Special chili oil, vinegar, and ramen pepper are placed on the table, so you can enjoy different flavors. The vinegar containing dried sardines and kelp is especially rare, and is recommended for those who want a refreshing taste.

They are also particular about the water they use, using activated water called "π water," which is said to bring out the flavor of the ingredients even more.

Highly addictive! Our signature dish, "Chuka Soba" with soy sauce or salt

The most popular dish is "Chinese Soba (Soy Sauce)" (800 yen).

The chicken-based soup is softly flavored with dried sardines and accentuated with the crisp taste of soy sauce. The custom-made extra-thick flat noodles mix well with the soup, creating a bowl of ramen that becomes more and more delicious the more you eat it.

The chicken fat that covers the surface is extracted from chicken skin every morning.

On this day, chicken skin topping was free (apparently they announce this on Instagram and offer it for free on an irregular basis).

The chicken skin, simmered in a roast pork sauce, has a rich flavor and a crunchy texture that adds an accent to the dish.

Next is "Chinese Soba (Salt)" (800 yen).

It's so popular that some people say, "Once you try it, you're hooked, and some people only order salt." The umami-filled soup has a strong, punchy flavor, with a strong sardine aroma that stands out more than soy sauce.

The sharp taste of the salt combined with the fragrant aroma of seafood makes it highly addictive.

The menma used is from Itoshima, and is moist and goes well with the soup without interfering with it.

The "Rich Seafood Tsukemen" and "Super Spicy Mala Dandan Noodles" are also popular.

The chewy noodles are perfectly mixed with the rich soup made with dried sardines and mackerel flakes, and the noodles are 1.5 times the normal size, making them extremely satisfying!

And the best of all is the "Super Spicy Mala Dandan Noodles (Original Sugamo-style Dandan Noodles)" (1,100 yen), a menu item that was introduced in November 2025.

Just looking at this spicy dandan noodles will make you say, "Wow!" The bright red soup with minced meat is topped with plenty of chili oil, and the color of the chives and green onions is also appetizing. I ordered the "raw egg" (150 yen), which is a recommended topping.

When you take a bite, you'll first get a tingling sensation from the Sichuan peppercorns, followed by the spiciness of the chili peppers. It's not just spicy, you can also taste the aroma of sesame, the rich flavor of chicken and pork bones, the flavor of seafood, and the umami of spices.

The texture and sweetness of the crunchy chives and large cut onions are perfectly matched with the mellowness of the raw egg, making it an addictive dish that becomes more and more addictive the more you eat it.

Another great thing about this ramen is that you can choose the spiciness and numbness level for free, even asking for "extra" or "extra extra." White rice is a must!

Starting in December 2025, they will also begin opening in the evenings, offering set meals including fried chicken, as well as simple snacks and alcoholic drinks in the evenings.
