A new type of pork cutlet worth waiting in line for! "Inokazu" (Hakozaki, Higashi Ward, Fukuoka City), with a secret base-like atmosphere

Inokawazu is famous for its moist pork cutlets, which are a little different from other restaurants. The restaurant is located in a back alley off National Route 3 in Hakozaki.

The shop looks more like a private home than a typical restaurant, so first-time visitors may get lost. In that case, it's best to use the black building, the noren curtain, and the intersection without traffic lights as landmarks to find the shop.

The interior of the restaurant has a calm atmosphere with only counter seats.

The sister restaurant, Tonkatsu Chisei, located in LaLaport Fukuoka, has table seating and is popular with families, but this restaurant seems to be more popular with individuals, friends, couples, and married couples.

The man in the kitchen is the third-generation owner, Manabe Kenta.

"I've been honing my skills in French cuisine for about 10 years, but I was so impressed with the tonkatsu at this restaurant that I decided to work here. I hope to continue the style practiced by the first and second generations, while also providing tonkatsu that evolves every day, without being content with the status quo," he said.

Try the "Special Black Pork Loin Cutlet Lunch"!

Lunch options include the most popular "Top Loin Cutlet Lunch" (1,400 yen, 200g), which lets you taste pork from Kyushu, as well as the "Top Fillet Cutlet Lunch" (1,400 yen, 150g), which boasts meat with just the right amount of elasticity, and the "Large Fried Shrimp and Top Fillet Cutlet Lunch" (1,900 yen, 100g).

This time, we will be enjoying the "Special Black Pork Loin Cutlet Lunch" (2,000 yen, 200g), which uses "Pure Black Pork Roppaku," considered the highest quality of "Kagoshima Black Pork Satsuma."

We carefully prepare high-quality pork and cut it into 2cm thick pieces. It takes a little time to cook the meat thoroughly in low-temperature oil.

In the meantime, let's take a look at the recommended ways to eat it written on the table.

The restaurant suggests four ways to eat it: 1. Lemon Salt, which is refreshing and easy to eat; 2. Wasabi Soy Sauce, a combination of sweet soy sauce from Fukuoka and wasabi for a satisfying aftertaste; 3. Original Grain Mustard, which offers a different texture to tonkatsu; and 4. Special Tonkatsu Sauce, which has a good balance of sweet and sour flavors.

According to the store manager, Manabe, "We rank the seasonings from 1 to 4 in order of lightness. They're delicious no matter how you eat them, but I personally recommend wasabi soy sauce, which neutralizes the heaviness of the fat." Try finding the way to enjoy them that suits you!

After 10 to 15 minutes, our ordered food arrived. It was a luxurious set meal on a tray, including the main dish of pork loin cutlet, rice, miso soup, takana (green mustard greens), and a small dish that changed daily.

The pork cutlet is cut into seven pieces, each measuring about 15cm in length. Because it is fried at a low temperature, the center of the meat is slightly pink.

The meat is coated in a moist batter, allowing you to fully enjoy the rich flavor and sweet fat that is inherent to pork.

Because it's cut thick, it's chewy and satisfying. The balance of lean and fatty meat is excellent, so the pork cutlet doesn't feel too heavy.

The pork cutlet is a great side dish that will have you eating more and more rice. Another great thing about this dish is that you can have as much rice, miso soup, and cabbage as you like!

There are only eight seats available, and because the food is deep-fried slowly at a low temperature, there can be a line of 10 to 15 people during peak lunch hours. If you're going in the afternoon, be prepared to wait in line. If you're short on time, we recommend visiting during dinner time. The menu, which uses premium black pork from Kagoshima Prefecture, is available both at lunchtime and in the evening.
