Remake easy is a members-only parfait bar with an undisclosed address that opened in Shibuya in 2020 as a "secret base for people who love sweets and alcohol."

The chain has gained attention through crowdfunding and social media, spreading across the country, and the Hakata Tenjin location will be its seventh store, making it the first in Kyushu.

Producer Hayashi Ooki is one of Japan's top pastry chefs, having trained in France and become the youngest person to win a prize at a Western-style confectionery competition in Japan.

The philosophy of "Remake easy" - remaking parfaits into the "perfect parfait"

The word parfait is said to have originated from the French word "parfait," which means "perfect."

However, Hayashi felt that in Japan, it developed independently within the coffee shop culture, and due to the economic situation, it evolved into an "incomplete dessert."

So Hayashi launched "Remake easy" as a place where he could reconstruct his ideal "perfect parfait" by pouring his knowledge and aesthetic sense as a pastry chef into it.

The tranquil world of "Remake easy Hakata Tenjin" with a tea room motif

Each Remake Easy store has a different interior concept, but the theme of the Hakata Tenjin store is "tea room."

In keeping with Fukuoka's deep roots in tea culture, the space incorporates the Japanese aesthetic of "wabi-sabi" in a modern way.

The illuminated wall behind the counter, which is modeled after a traditional Japanese lantern, is covered with non-flammable Japanese paper made by a Kyoto paper craftsman.

The L-shaped counter is also covered in washi paper, and in the center is a serving entrance and tea kettle.

The raised sofa seating, resembling a tokonoma alcove, is available for two and four people, allowing you to spend intimate time with your loved ones.

Directly above each seat, there is a dedicated light that shines on each parfait, ensuring that no shadows are cast on the parfait.

The main attractions are three types of parfaits and pairing cocktails!

There are three types of parfaits: the signature "Strawberry Flower Garden Parfait" (3,500 yen), the "Seasonal Parfait" made with a generous amount of seasonal fruits, and the "Japanese Tea and Mango Tiramisu Parfait" (3,500 yen), which is only available at the Hakata Tenjin store.

Each parfait is also paired with an alcoholic or non-alcoholic cocktail.

The award-winning specialty, "Strawberry Flower Garden Parfait"

The "Strawberry Flower Garden Parfait" is a parfait-style remake of the creation that Hayashi created when he stood on the podium at a pastry chef competition.

It is carefully layered with Italian amaretto liqueur mousse, raspberry jelly, French vanilla ice cream, and garnished with plenty of white chocolate mousse and jewel-like strawberries, creating an elegant appearance reminiscent of a flower field.

For pairing, we offer the slightly carbonated cocktail "Amaretto Ginger" (1,430 yen), which combines fermented ginger ale with amaretto, and has a gorgeous aftertaste.

August 's limited edition parfait: "Summer Bean-to-Bar Chocolate Parfait with Peach and Peruvian Cacao"

"Seasonal parfaits" are offered, changing every month.

The August "Summer Bean-to-Bar Chocolate Parfait with Peach and Peruvian Cacao" (3,500 yen) is made with a generous amount of original chocolate made by Hayashi himself using Peruvian cacao, allowing you to enjoy the marriage of the gorgeous fruitiness of cacao and seasonal white peaches.

As a pairing cocktail, "Peach and Cacao Utopia Fizz" (1,430 yen) combines cacao and white peach pulp with refreshing bergamot liqueur.

You can choose the non-alcoholic "Peach and Cacao Earl Grey Tea Soda" (1,430 yen), which can be enjoyed with the lingering aftertaste of Earl Grey.

Store-exclusive "Japanese Tea and Mango Tiramisu Parfait"

On the day, I had the "Japanese Tea and Mango Tiramisu Parfait," a parfait exclusive to Hakata Tenjin.

This special menu is an evolution of the "Hall of Fame" parfait that has been voted number one by fans for two consecutive years, using ingredients from Kyushu.

The base of the parfait is mango jelly and a crumble of crushed graham cookies coated with white chocolate and butter.

The thin oil film repels moisture, preventing the cake from becoming soggy due to the fruit juice or ice cream, allowing you to enjoy the crunchy texture until the very end.

On top of the crumble, ripe mangoes from Miyazaki Prefecture called "Taiyo no Tamago" are spread along the edge of the glass.

This mango is said to be the best in Japan, with a melt-in-your-mouth texture and a rich, fragrant sweetness.

The center is topped with mango cream, matcha dough, and a generous amount of mascarpone mousse flavored with sake.

The sake used for flavoring is a precious sake from Nagasaki called "Hiran Reborn."

Kijoshu is a type of sake fermented using sake instead of brewing water, and is characterized by the natural flavor of rice and a rich sweetness.

The parfait is topped with milk gelato infused with Yame tea and a meringue stick made with matcha.

The Yame tea used in the gelato is Shiraorecha, a type of tea made from the stems that has little astringency, and has an elegant tea aroma that complements the sweetness of the vanilla.

The meringue is made with rare, pesticide-free matcha, which has a light, fizzy texture and a rich matcha aroma that complements the sweetness of the gelato and mango.

One of the two pairing cocktails that go with the "Japanese Tea and Mango Tiramisu Parfait" is the "Yame Tea Espuma and Kijoshu Passion Rikyu Highball" (1,430 yen).

This original highball is made by mixing low-temperature extracted Yame tea with the sake "Hiran Reborn" and carbonated water, and you can enjoy two layers of flavor along with the acidity of simmered passion fruit.

The other drink, "Specially Selected Matcha Fragrant Rikyu Soda Up" (1,430 yen), is a refreshing non-alcoholic cocktail made with specially selected matcha and citrus scented soda.

At "Remake easy," ordering a parfait is not required, and you can also come to the bar just for drinks. They have a wide selection of alcoholic beverages, including beer, champagne, and whiskey, so you can casually enjoy an adult evening out with just one drink.

You can also receive the original granola "AKEGRA" as a souvenir, so you can enjoy the rich aftertaste until the next morning.

How to use "Remake easy"

The address is not disclosed and it is a members-only establishment, so you must become a member to use the store.

There are two types of membership: "Silver Membership" (monthly plan 3,850 yen/annual membership plan 39,600 yen), which can be used at only one store, and "Gold Membership" (annual membership fee 100,000 yen), which can be used at all stores.

You can become a "Silver Member" by winning a lottery held irregularly on the website, or by being introduced by a "Gold Member," who can only join through crowdfunding.

After joining, you will be notified of the store address via LINE and can make a reservation to visit the store.

Not only the parfaits and cocktails, but also the shape of the glasses, the width of the spoons, the lighting and the design of the counter have all been meticulously designed to convey the deliciousness to the fullest extent.
