The key is koji and spices! A natural bakery that uses ingredients that attract a lot of repeat customers (Yakuin, Fukuoka City)
Hello. I'm Shou Fujita, a gourmet writer who prefers bread in the morning.
This time, we will introduce a popular bakery in Yakuin that bakes healthy bread and sweets using carefully selected ingredients.
Loma BAKERY: A bakery that cares for your body, attracting many repeat customers (Yakuin, Chuo-ku, Fukuoka)
Loma BAKERY is located along Takamiya Street, a 7-minute walk from Yakuin Odori Station on the Fukuoka City Subway Nanakuma Line.
We offer a variety of breads and sweets, carefully baked using homemade natural yeast, koji, and spices.

The owner, Takahiko Mizoguchi, was originally a company employee, but his desire to learn how to make bread led him to start training at a popular bakery in the city.
After that, he opened "loma BAKERY" in November 2019 together with his wife Satsuki, who is a certified "Yakuzen Kojishi".

The store name "loma" means "holiday" in Finnish.
Takahiko and Satsuki, a married couple who were born on a national holiday, named it with the hope that people would feel the same excitement they get from eating bread on a holiday morning, even on ordinary days.

The store has a vintage feel and is filled with rustic warmth, and 30 to 40 different products are displayed each day.

The bread and sweets are made using natural yeast and koji, which breaks down gluten naturally. They are known for their mild flavor that is good for the body.

Another distinctive feature of the bread is that it uses "native" vegetables and herbs that have not been selectively bred, which are delivered from a farm that Takahiko knows. The bread is carefully shaped through repeated trial and error to bring out the flavor of rare ingredients.
Another reason for its popularity is vegan-friendly sweets that do not use animal products such as eggs or butter, such as "Salt Koji Scones" and "Vegan Pie."

The ingredients used are carefully selected, including homemade shio-koji (salt koji) made from pesticide-free rice and organic maple syrup.
Introducing the masterpieces of bread and sweets from "loma BAKERY"!
Cardamom Bread
"Cardamom Bread" (410 yen) is an ever-popular, no. 1 item inspired by Finland's classic cardamom roll.

The dough is made with homemade sourdough yeast and is woven with sugar paste flavored with plenty of cardamom.
The outside is crispy and fragrant, with a gentle sweetness and a refreshing spicy flavor of cardamom.
Salt Koji Campagne
"Shio Koji Campagne" (453 yen), which contains two types of natural yeast and homemade shio koji, is also a popular item with many repeat customers.

Aging for a long period using the overnight method enhances the flavor and gives it a rich texture.
With its bouncy texture and subtle acidity, this is a campagne bread you'll want to eat every day.
Shio Koji Scones
The egg- and dairy-free Shio Koji Scone "Chocolate Cardamom & Pistachio" (432 yen) has a bittersweet cacao flavor that makes it the perfect accompaniment to coffee.

This is a well-balanced dish with the refreshing taste of cardamom and the deep aroma of pistachios.
In addition to the scones, there is a wide range of other intriguing flavors available, such as "Green Tea, Cacao Nibs, and Brown Sugar" and "Adult Chocolate Mint."
On Thursdays there is an especially wide variety, with around eight different types on display.
Wagyu Beef Keema Curry
The "Wagyu Beef Keema Curry" (345 yen) is a steamed bagel made with natural yeast and is a satisfying dish that is perfect for breakfast or lunch.

The chewy and soft dough is complemented by the fluffy texture of the chickpeas. The cheese gives a mellow flavor to the spicy curry.
muffin
The "Chamomile, Cranberry, and White Chocolate" muffin (453 yen) is also one item you should definitely try.

The dough, which uses homemade cascara yeast made from dried coffee bean pulp and skin, has a moist texture.
This elegant flavor combines the mellow sweetness of white chocolate with the sharp acidity of cranberries.
Chai Cream Bun
"Chai Cream Bun" (302 yen) is also a highly original dish.

The soft and moist brioche dough is filled with cream made from a blend of 10 spices, including cardamom and anise. This cream bun is perfect for adults.
Kaneko Shoten Vegetable Soup
A great companion to the bread is the "Kaneko Shoten Vegetable Soup" (378 yen), made from beans and carrots grown by "seed farmers" who harvest the seeds from the crops they produce.

The sweetness of the vegetables blended into the thick soy milk soup, giving it a rich and gentle flavor.
Breads such as white bread, campagne, and baguettes can be reserved several days in advance. Other breads and sweets can also be reserved by phone after 12:00 on the day of purchase.

The bread and sweets at "loma BAKERY" are made with great attention to each and every ingredient, and with the consumer in mind.
This is a heartwarming bakery that is imbued with the kindness of the husband and wife Mizoguchi family who make the bread. (Text by Sho Fujita)
