This time, we will introduce a yakiniku restaurant that opened in Tenjin, Chuo Ward, Fukuoka City, that purchases entire wagyu cows.
The "original" Japanese beef beef yakiniku specialty restaurant that buys an entire cow has arrived in Kyushu for the first time! "Japanese beef beef, yakiniku, hand-made cold noodles, Fusaya Fukuoka One Building Store" (Tenjin, Chuo-ku, Fukuoka City)
"ONE FUKUOKA BLDG." (commonly known as One Building) opened in the heart of Tenjin in April 2025. On the basement floor is "Tenjin no Rengai," a shopping district filled with restaurants.

In one corner of the park is "Boya Fukuoka One Building Branch," which buys an entire Wagyu beef cow, serves hand-made cold noodles, and serves yakiniku.

Fusaya was founded in Nishi-Nippori, Tokyo in 2003. It is now a dynamic yakiniku restaurant with nine branches in the city.
The 10th store is the Fukuoka One Building Store, and it is the first store outside of Tokyo.
The store's selling point is that it offers high-quality meat at reasonable prices by purchasing the entire Wagyu cow. Although there are now more and more stores that purchase the entire cow, there were almost none 20 years ago, making this store something of a pioneer.
Private rooms available! The interior is well ventilated and odor-free.
The store is clean and well ventilated, so there's no unpleasant odor.
The restaurant is characterized by its bright and open design, with no partitions. The 82 seats (maximum 9 people per table) are arranged around the kitchen, and the flow of traffic is well thought out, making it a very comfortable space.

All orders are entered on a tablet.
It's very stress-free as you can use the tablet to request water, small plates, grill changes, table clearing, and even toothpicks.
There are a selection of carefully selected condiments on the table, and if you order the assortment for two or more people, a sauce to marinate the meat before grilling will also be provided (although this may not be available if the only thing being grilled is tongue or the order is small).

It's fun to compare different cuts! The specialty "Fusaya whole chicken platter"
The must-order menu item is the "Fusaya Whole Head Serving" (4 types: 2-3 servings, 6,580 yen, 6 types: 4-5 servings, 9,480 yen).
The meat served changes depending on the day. They look at the balance of meat on offer that day and mix high-quality kalbi (white meat) and loin (red meat) to ensure that you won't get bored of the menu.
The "4-item platter" I ordered included sirloin, ichibone, brisket, and thigh of a Japanese beef cow. All cuts were tender and had a delicious fatty taste! Once you try it, you'll understand why.
Compare the various textures of seitan! "Tongue Assortment"
A must-see for tongue lovers! There is also a "Tongue Assortment" (1,980 yen per portion, for 2 people or more) where you can enjoy whole, raw tongue that is not frozen.
There are six types of tongue: special tongue core, tongue tendon, premium tongue salt, tongue tip salt, seared tongue shabu-shabu, and tongue naka-raku. The thick tongue is satisfying and delicious.
The "seared tongue shabu-shabu" was wrapped in green onions. I could eat as much as I wanted!

Two noteworthy grilled dishes prepared right before your eyes
The staff will make the "Grilled Large Temari Sushi (with radish)" (980 yen each) right in front of you.
There is seasoned grated daikon radish between the meat and the rice, creating a perfect balance with the fat. It is light and delicious.

This "Goddess' Yukhoe" (1,680 yen) is also cooked at the table using a burner. The rich egg yolk adds to the flavor, making it an irresistible dish for meat lovers.
The hiyashi noodles with sherbet-like soup are also a must-try!
Fusaya is not only particular about yakiniku, but also about its "hiyashi-men" (cold noodles). The noodle dough is made in-house, and the noodles are made in a special extractor for each order, then boiled immediately after making. The noodles are then cooled to nearly freezing using a special machine.

This is the shop's recommended dish, "Morioka kneaded hand-made cold noodles" (680 yen).

The homemade noodles are smooth and chewy! The soup is ice-cold like a sorbet, which cools down your body when it's hot.

It was the perfect size to finish off a meal of yakiniku. They also have the "Morioka kneaded hand-made cold noodles, large size" (1,080 yen), which is perfect to eat on its own.
The "Daegutang Noodles" (1,190 yen) was also delicious, with a warm, spicy soup that was simmered slowly using a blend of gochujang.

Be sure to check out the side dishes too
There are also a variety of side dishes available.
This is the "Freshly made Chinese cabbage kimchi" (580 yen), which is made to order. The key to the flavor is the homemade yangnyeom made with 13 different extracts.

The "Nori Plenty of Mixed Namul" (960 yen) was flavorful and exquisite.

For dessert, we recommend the crispy and fragrant [Ice Gratin] (530 yen).

For lunch, there are more affordable options. You can even just order cold noodles! Lunch-only courses start at 3,000 yen, and dinner banquet courses with all-you-can-drink are available from 6,500 yen.
