Hello. This is Chihilog, a casual website that provides information about Fukuoka and its surrounding areas, with a focus on gourmet food.

This time, we will introduce a course meal supervised by a famous chef that started this spring in Daimyo, Fukuoka.

Noodle dishes for lunch and genre-less dinner for dinner! "Nishimuraya" (Daimyo, Chuo-ku, Fukuoka City) supervised by a one-star chef

Nishimuraya is located on the second floor of Fukuoka Daimyo Garden City, a two-minute walk from Tenjin Station on the subway.

This is a food theme park overseen by Chef Takahito Nishimura of Nishimura Takahito la Cuisine creativite (Heiwa, Minami-ku, Fukuoka City), a restaurant that was awarded one star in the Fusion Category of the Michelin Guide Fukuoka, Saga, Nagasaki 2019 Special Edition.

The restaurant has both table and counter seats, making it an easy place to drop in even if you're alone.

Starting in March 2025, the restaurant will operate as "Nishimura Takahito Museum Dining" during dinner time (17:30-23:00, last orders 21:00).

They offer three types of courses (3,800 yen, 5,800 yen, and 8,800 yen) that allow you to enjoy genre-less fusion cuisine made with an abundance of seasonal ingredients with all your senses (only the 8,800 yen course requires a reservation by the day before).

This time I ate the 8,800 yen course. It was an omakase course, but it was packed with seasonal dishes and specialty dishes!

Sea bream and kelp jelly, carrot mousse

The first dish to be introduced was the "Sea Bream, Kelp Jelly, Carrot Mousse," perfect for early summer. It was served in a glass container and looked cool.

The cool jelly with the flavor of kelp brings out the deliciousness of the sea bream. It's a delicious cold dish that will cool your whole body down.

Yam spring rolls with pancetta and tomato sauce

The next dish that arrived was "Yam Spring Rolls with Pancetta and Tomato Sauce."

Under the freshly grated pancetta that blooms like a flower are spring rolls. The crispy and fragrant spring roll skin is filled with plenty of steaming taro.

The sourness of the tomato sauce underneath is also very flavorful! The variety of textures makes this a fun dish.

I was amazed at how different the flavor of the food could be from the first to the second dish, and I was looking forward to the next dish.

Cold Vichyssoir Pasta with Summer Truffles

The next dish that was brought out was the cool, summery "Cold Vichyssoire Pasta with Summer Truffles."

This delicious dish has a gentle, creamy flavor accented by the fine taste of summer truffles, making it incredibly delicious.

Homemade bread

This "homemade bread" went perfectly with the pasta sauce mentioned earlier.

You can really taste the wheat flavor and it has a fluffy texture!

Seafood white mapo tofu

Another feature of the restaurant is that the courses do not only include French cuisine, but also incorporate Japanese and Chinese cuisine.

The white mapo tofu was filled with seafood and topped with a generous amount of dried mullet roe, making it a dish with a strong flavor.

Next came sushi!

It was topped with Mimolette cheese, and the rich flavor spread throughout my mouth.

Squid ink sausage, raw ham

Under the prosciutto is a sausage that has been kneaded with squid ink! It's a delicious dish that is both mild and meaty.

It is clear that the food is prepared with great care given to the flavor, texture, and temperature of the ingredients.

Japanese style Acquapazza

The "Japanese-style Acqua Pazza" was packed with the flavor of seafood. The high-quality taste that brought out the best in the ingredients was impressive.

Grilled beef loin with yam sauce

"Grilled beef loin with yam sauce" is a fragrantly grilled tender beef loin topped with a generous amount of mildly flavored yam sauce. The meat is quite large, but it's so delicious that it's a shame to finish it once you've eaten it!

Choose your own Nishimura noodles

For the final course, try the specialty "Nishimura Noodles." You can choose from "Pork Creamy (Nishimura Tonkotsu)," "Porcini Mushroom," and "Omar Shrimp" (plus 1,140 yen). You can also choose the size from regular size or half size depending on how full you feel.

I ordered the regular size "Pork Creamy (Nishimura Tonkotsu)".

The ramen is based on pork bone soup, blended with Japanese dashi and several types of cheese. The noodles, made with glutinous wheat, are original noodles ordered from "Seimennya Keishi."

The toppings were smoked chicken char siu and moist pork shoulder char siu.

My companion ordered a half-size bowl of lobster ramen.

The soup, made with a generous amount of lobster extract, is surprisingly rich, with a full flavor that fills your mouth.

The noodles are hand-kneaded curly noodles that coat the soup well.

It is topped with lobster dumplings and is eaten with the rouille sauce, which adds richness and depth to the dish.

Then comes freshly cooked rice, shiny and delicious enough to make you want to tell everyone about it.

After that, I poured cheese and Nishimura noodle soup over it and ate it like risotto...it was absolutely delicious!

For dessert, we had the Matcha Tiramisu, which was an amazing treat with a rich matcha flavor.

All 13 dishes were a delight for all the senses, conveying delicate attention to the flavor, color, and temperature of the ingredients.
