This time, we will introduce a popular ramen restaurant in Ropponmatsu, Chuo Ward, Fukuoka City, where you can enjoy carefully made homemade noodles and secret pork bone soup.
Enjoy the flavor of this long-established restaurant that has been loved in Nagasaki for over 50 years in Fukuoka! "Oshima Ramen Azumaya Fukuoka" (Ropponmatsu, Chuo-ku, Fukuoka City)
Located a 5-minute walk from Ropponmatsu Station on the Nanakuma Subway Line, Oshima Ramen Azumaya Fukuoka is marked by a blue curtain and opened in June 2017 as a sister store of Azumaya, a long-established ramen restaurant in Saikai City, Nagasaki, which has been in business for over 50 years since the owner's grandfather.
There is no dedicated parking lot, but there is a paid parking lot nearby.

The shop has counter seats and table seats, and has a warm wooden interior, making it a comfortable space even for women to dine alone.
The venue was fully booked immediately after it opened, and people of all ages were enjoying themselves.

Here is the menu.
In addition to the standard menu items of "Oshima Ramen" (780 yen) and "Champon" (980 yen), traditional flavors inherited from the main store by the third-generation owner, limited-time noodles are also available on an irregular basis.
This limited-edition noodle is an original noodle that incorporates new ideas based on Oshima ramen, and while protecting tradition, it also challenges the possibilities of new ramen.

The famous "Oshima Ramen" is a refined soup made with pork bones and chicken bones!
From the menu, I chose the standard "Oshima Ramen" (780 yen).
First, take a sip of the soup.

It starts off with a light, unobtrusive taste, then slowly builds up into a deep, rich flavor, with a crisp, clean aftertaste.
This is the first time I've had such refined pork bone ramen...!
The secret to this flavor, which sets it apart from Hakata's tonkotsu ramen, is the addition of chicken bones to the pork bones.
Using a closely guarded recipe, the flavor is extracted slowly and carefully over a period of time, resulting in a deep, rich flavor with a light aftertaste.
Next, the homemade straight noodles.

The crisp texture and aroma of wheat are irresistible! It goes perfectly with the soup, and is so delicious you won't be able to stop eating.
The noodles are made from a unique blend of three types of domestic wheat carefully selected by the owner himself, and are made to suit the conditions such as temperature and humidity on the day the noodles are made.

The char siu is also excellent.
The smoky aroma, which is roasted just before serving, blends into the soup and spreads throughout your mouth.
