This time, we will introduce a yakiniku restaurant located in Kokurakita Ward, Kitakyushu City, which only accepts reservations and has a set course menu of three groups per day.

"Red Beef Yakiniku Ryusui" is located about a 7-minute walk from JR Kokura Station.
This is a yakiniku restaurant that operates by reservation only and purchases an entire red beef cow raised on the "Hoshi no Wagyu" farm in Aso, Kumamoto, and serves it as a course meal.

The interior of the store is stylish.
Of the three groups limited per day, only one is seated at the counter (for 2-6 people). This special seating allows you to enjoy a pleasant conversation with the friendly owner, as well as watch the meat being grilled right in front of you.

There are three tables (accommodating 2-6 people) where you can grill your own meat.
On the wall was a photo panel that conveyed the attention to detail that goes into making Hoshi no Wagyu.

At this restaurant, you can enjoy the "highest quality" Akagyu beef, which the owner personally visits the farm and selects.
"I was impressed by the way they raise their cows with love, sleep within sight of the cowshed, and protect and nurture their lives 24 hours a day, 365 days a year," said the owner, who visits the farm regularly.
The owner was impressed when he first visited the cowshed, which was very well maintained and had no particular smell.
Instead of using antibiotics or chemical feed, they feed the cows with the natural blessings of plant enzymes and let them graze in plenty of sunlight, in order to raise cows that are healthy in body and mind, and in order to produce delicious meat.

They only offer course meals, including the "Standard Course" (8,000 yen with appetizer, 9,000 yen without), "Red Beef Sirloin Course" (10,000 yen with appetizer, 11,000 yen without), "Japanese Black Beef Chateaubriand Course" (13,000 yen with appetizer, 14,000 yen without), and "Japanese Black Beef Chateaubriand & Hoshi no Wagyu - Red Beef Sirloin Enjoyment Course" (15,500 yen with appetizer, 16,500 yen without appetizer). If you want to enjoy the meat even more, we recommend choosing without the appetizer! You can add all-you-can-drink to any course for an additional 3,000 yen.
This time, I ordered the "Standard Course" (8,000 yen) which includes an appetizer. The menu and number of dishes vary depending on the season and meat availability.
Red beef corned beef
The first dish of the day was "Akagyu Corned Beef Specialty." It was presented in a package that looked like a hamburger, and immediately captured my attention: "What is this!?"

When I opened the lid, I found it to be a gorgeous dish that was a little different from the corned beef dishes I was familiar with!
It is topped with pisto fried with garlic and herbs, Middle Eastern hummus, and pickled radish, which add depth to the flavor of the corned beef. This delicious start to the first dish builds up anticipation.

Offal quiche
The second dish is "Hormone Quiche and a Salad You Can't Find Anywhere Else."
The quiche is a perfect match of the soft, milky dough and the fluffy red omasum (stomach senmai). It can be eaten as is, or with beetroot sauce or mustard.

The accompanying wild herb salad uses chickweed, dayflower, vetch, and other herbs harvested in Kamige Town, Fukuoka Prefecture.
The quiche and salad were delicious.
Omasum sashimi
The third dish was "Omasum sashimi," which gave us the feeling of early summer.
The extremely fresh omasum sashimi, combined with a spicy homemade sauce, has a juicy and soft texture.
The punchy flavor goes well with parsley.

Yukhoe topped with a melting fried egg
Next up was the "Yukke topped with a melting fried egg," made with horse meat.

It is topped with a generous amount of Italian Parmesan cheese.

The part that looks like the white part of the fried egg is a foamy sauce made from freezing it. Just mash it quickly and put the whole thing in your mouth.

The owner will place rice on top of the seaweed for you, and then you can add the yukhoe on top.
It had an amazing taste, almost like high-class rice with raw egg on top.

5 kinds of dishes with red beef steak
From here, the red beef yakiniku will be served. You can enjoy various cuts such as rib eye and top blade, and finally steak.
Depending on the course, the type of steak varies: thigh (as shown in the photo), sirloin, or Chateaubriand.

The meat is served with a homemade sauce made to complement Hoshi no Wagyu's red beef, as well as kimchi sourced from Kyoto.

Now, it's time for the meat.
This time I ate at a counter seat, and the owner cooked the steak to perfection.

The first thing to be cooked was the "Salted Red Beef One Type." On this day, it was "Thigh." The fat was very sweet and juicy. The meat was overflowing with flavor.

Next up was the "Two Kinds of Grilled Red Beef (with Apple Jelly Sauce)".
The first type of sauce-grilled dish, "Ribeye," is made from the center of the rib, giving it a soft and fluffy texture. The delicious flavor that lingers from the moment it touches your tongue is irresistible.

The second type of grilled meat with sauce, "Misuji", is served with lettuce, perilla, and apple...!

The apple is actually "Apple Jelly Sauce." The apple is filled with a homemade jelly-like sauce.

The Yakisuki (with egg yolk truffle sauce) was, without exaggeration, the most amazing dish I have ever had in my life.
The soft texture and refined meatiness are perfectly matched with the delicious flavor and aroma of the meat.

Of course, Yakisuki is also delicious when eaten with rice cooked in a clay pot.

The "Red Beef Lean Steak (with seasonal grilled vegetables)" is a hearty dish made from thigh meat. It directly conveys the appeal of "Hoshi no Wagyu" red beef.
It was served with a balsamic sauce that had been aged for 15 years, and semi-dried tomato and pumpkin puree that had been heated in the oven for 90 minutes.

The seasonal grilled vegetables on this day were carrots, cabbage, sweet potatoes, green beans, beet leaves, etc. They were all delicious, with the temperature and time apparently being changed depending on the vegetable, using low-temperature steam.

The "Offal Platter" comes with three types of intestines: round intestines, tripe, and honeycomb tripe.

The intestines in particular were so soft and fluffy that they melted in my mouth. It was the first time I had ever eaten such delicious horumon.

Red beef curry
The final dish is "Red Beef Curry."
This sumptuous curry is filled with chunks of red beef and is garnished with marinated red onions, a mix of small fish and nuts, and ginger.

Pear sorbet
The final dessert was a refreshing sorbet made with Oita's brand pear "Hosui" and yogurt.
It was also served with fruit, so I was very satisfied until the very end.
