This time, we will introduce you to a very popular tsukemen specialty restaurant located in Kogane, Kokurakita Ward, Kitakyushu City.

A line even before the opening! A specialty tsukemen shop known only to those in the know: "Original Saga Tsukemen Kotora Kokura Branch" (Kogane, Kokurakita Ward, Kitakyushu City)

The Kokura store opened in June 2023 as the second store of the popular tsukemen specialty store, Original Saga Tsukemen Kotra, located in Arita Town, Nishimatsuura District, Saga Prefecture.

It is a white building located in a residential area, a 7-minute walk from Katano Station on the Kitakyushu Monorail.

The shop doesn't have a sign, just a cute illustration of a tiger.

This is such a popular restaurant that there's a line before it even opens! I went there around 11am on a Saturday, and luckily I didn't have to wait in line because it was raining. I recommend going there with plenty of time to spare.

The exterior wall has the concept of the tsukemen written in a playful way, so you can have fun while you wait.

The interior of the restaurant has a modern and stylish atmosphere. It is small with only 15 seats at the counter, so it is easy to come alone.

You'll be amazed by the deliciousness! The most popular dish is "Kombu Water Tsukemen with Meat and Egg"

"Ganso Saga Tsukemen Koko" uses homemade noodles made from 100% wheat grown in Saga Prefecture. They are made daily in a noodle-making machine inside the store, and are characterized by their chewy texture and rich aroma.

Their signature dish is the "Kombu Mizu Tsukemen" (from 1,000 yen), which allows you to enjoy their carefully selected noodles in a simple way. The price varies depending on the amount of noodles (200g or 300g) and toppings such as "boiled egg", "meat", or "meat and egg".

Although not tsukemen, you can also enjoy the standard "Niboshi Ramen" (900 yen) and "Niboshi Char Siu" (1,100 yen).

On some days, there are limited-edition menu items that are not listed on the ticket machines. On the day I visited, there was the cold mixed noodle dish "Kurotora" (from 1,000 yen) and the Chinese noodle dish "Tora Soba" (900 yen).

This is the most popular dish, "Kombu Mizu Tsukemen with Meat and Egg 300g" (1,350 yen). The noodles, rare pork shoulder char siu, boiled egg, and seaweed are served in clear "Kombu Mizu" - it's beautiful! In addition to the dipping sauce, a small dish of wasabi is also included.

By the way, 200g of noodles is the same price, so you'll get a better deal if you choose 300g.

There is seaweed salt and plum salt on the counter.

First, sprinkle some seaweed salt on the noodles and enjoy them as is, without dipping them in the dipping sauce.

The noodles, which are tightly packed in ice water, are smooth and chewy, with a firm and elastic texture.

The kelp water, with its flavor infused into it, is thick and mixes well with the noodles, making it delicious. Adding some seaweed salt to the water brings out the flavor of the noodles even more.

It's also delicious with wasabi!  If you tell the staff, they will bring you more wasabi.

Next, dip it in the warm dipping sauce.

The soup is based on Japanese dashi and has a strong bonito flavor, and when mixed with the noodles it's absolutely delicious!

The dipping sauce contains two large charcoal-grilled "arita chicken", which is also filling and delicious!

If the dipping sauce becomes lukewarm after soaking the noodles, just let the staff know and they will reheat it for you.

The rare pork slices are cooked at low temperature, so they are thick but moist and tender. They are meaty and full of flavor. You can enjoy them as they are, with wasabi, or in dipping sauce... you can enjoy them in a variety of ways, which is a plus.

The boiled egg is soft-boiled to the perfect degree, and the soft, runny yolk is irresistible.

The kelp water is added to the dipping sauce at the end to make a soup. It was delicious and tasty.

Be sure to check out the limited menu item "Tiger Soba"!

I also tried the "Tora Soba" (900 yen), which appears irregularly. It is a soy sauce-flavored Chinese noodle dish made with a whole chicken base.

You can also add toppings such as "boiled egg" (+150 yen), "Saga seaweed" (+100 yen), and "meat" (+200 yen), and you can also get a large portion for an additional 100 yen (the photo below is without toppings).

The soup is rich and flavorful with chicken stock. It's so good you'll want to drink it all up.

The noodles are medium-thick and chewy, and mix well with the soup for a delicious taste.

The pork slices are also very filling! I'm glad that there are two slices on top. I also recommend adding the accompanying spice "Sichuan peppercorns" to change up the flavor.
