A ramen-loving writer's favorite! A superb tonkotsu ramen with a rich, odorless soup

This time, we will introduce you to an excellent tonkotsu ramen restaurant in Hirokawa Town, Yame County.
Very popular with families! A popular tonkotsu ramen restaurant: "Ramen Umashi" (Hirokawa-cho, Yame-gun)
Ramen Umashi is located about an hour and a half by car from central Fukuoka (on public roads) and about three minutes by car from the Hirokawa Interchange on the Kyushu Expressway.
This restaurant prides itself on its rich but not heavy pork bone ramen.
It is located along National Route 3 and has a large parking lot, so it is convenient to go by car.

To order, you purchase a meal ticket from the ticket machine. Please note that they only accept cash.
The signature dish is "Ajitama Ramen" (900 yen).
Other options include "Rich Ramen" (850 yen), "Rich Ajitama Ramen" (1,000 yen), "Char Tama Ramen" (1,690 yen), "Negitama Ramen" (1,520 yen), and "Takana Nori Tama Ramen" (1,050 yen), all of which are popular! There is also a milder "Ramen" (750 yen).
There are a variety of toppings available, such as "flavored egg" (150 yen), "green onion" (130 yen), "roasted pork" (330 yen), "seaweed" (120 yen), and "takana" (100 yen), so you can arrange it to your liking.
"Ajitama Ramen" - Impressive rich and odorless soup!
What we would like to introduce to you today is the ever-popular "Ajidama Ramen" (900 yen).
This is an exquisite ramen that shows delicate attention to detail in every aspect.
First, the secret sauce. It is made using Rausu kelp, known as the king of kelp, local Kurume soy sauce, and Aichi soy sauce, with a balanced addition of several other ingredients, including carefully selected flying fish stock. It is a special sauce made in pursuit of the "ultimate flavor."
Next is the pork bone soup.
It is made from 100% pork bones, but they use carefully selected parts to avoid any unpleasant odor. The basis of pork bone soup is to simmer over high heat for a long time. This restaurant also simmers at "MAX heat," but the time is not just long; it is the "best time to bring out the umami of the pork bones," which they discovered after much research.
And the noodles.
They use noodles from a famous local noodle factory, carefully selected to go perfectly with the soup.
Although the noodles are thin, they are not too thin and have a slightly chewy texture. They mix well with the special soup and really bring out the flavor of the soup.
It looks like a standard, cloudy white tonkotsu ramen, but the umami flavor of the broth is very strong and the saltiness is quite pronounced, and the moment I took a bite I knew it was different from any other ramen.
The noodles go down so smoothly you'll find yourself eating more and more. The large pieces of pork slices also make for a very satisfying bowl.
Add a soft, soft, half-boiled seasoned egg and you'll be in for a blissful experience!
I've eaten a lot of tonkotsu ramen in my time, but it's no exaggeration to say that this is the first time I've ever had a ramen that really hit me like this.
It was really delicious.

This is the "fried rice onigiri" (150 yen each, 300 yen for 2 on a plate), which is only available at lunchtime.
My personal opinion is that fried rice at ramen restaurants is delicious, and this restaurant is no exception!
It has become a big favorite with the kids♪ It's a great accompaniment to ramen. In the evening, they also have the "Half-fried rice" (390 yen) and "Fried rice" (830 yen), which are only available at night.
