We will introduce you to a miso ramen specialty restaurant in Kasuga City that is gaining attention in Fukuoka, where tonkotsu ramen is the norm.

Hakata Bunpuku is located about a 15-minute walk from Nishitetsu Ijiri Station, right in front of the Nishitetsu bus stop Goryo. It is a grey building with a large logo.

The owner, who has worked at Hakata Ippudo for 23 years since his late teens and has also been involved in the launch of overseas stores, will open a miso ramen shop in 2021 instead of tonkotsu ramen.

He aims to become a "local ramen shop" that is loved by locals, from small children to the elderly, like the ramen shop "Ichi Fuku" that he used to go to when he lived in Tokyo.

The ramen at Bunpuku is characterized by its raw miso, which has not been pasteurized, combined with a soup made from pork bones, chicken bones, and Japanese dashi. The owner, who is also a Miso Sommelier (Certified Miso Sommelier Association), has a deep knowledge of the ramen and has many years of experience.

The ramen won the Ramen Toryumon 2024 contest hosted by the Shin-Yokohama Ramen Museum, and will be opening a stall at the museum for one year starting in August 2024.

The store is open in two shifts: 11:00-16:00 and 18:00-20:30.

I visited here around 12 o'clock on a weekday.

Upon entering the store, there is a ticket machine with a wide variety of miso ramen options on the menu, including the signature "Miso Ramen" (850 yen), "Cheese Miso" (1,100 yen), and "Spicy Green Onion Miso" (1,000 yen).

There are counter seats and table seats, and there is also a tatami room on the second floor (reservation required).

Once you try it, you'll be hooked! The extremely spicy "Mao Zedong Miso Tonkotsu"

I was torn between getting the ramen with its luxurious pork slices and toppings, but when I heard the name, I couldn't resist trying it.

I had the "Mao Zedong Miso Pork Bone" (1,000 yen).

This is a miso pork bone ramen made with clear pork bone soup and the spicy seasoning "Mao Zedong Spice."

By the way, "Mao Zedong Spice" was created based on the spicy spices commonly used in Hunan Province, the birthplace of the Chinese thinker Mao Zedong.

You can choose between thin or thick noodles.

The contrast between the green of the leaves and the orange of the soup on top is striking. By the way, if you are worried about the soup splashing on your hands, you can get a paper apron.

Let's start with the soup.

The "Mao Zedong spice" is well-balanced, giving it a delicious spiciness that comes after a long shave.

I chose thick noodles, which are homemade, flat and thick.

The chewy noodles mix well with the soup and are easy to swallow. Many of the customers around me also chose the thick noodles.

The toppings are thick pork slices and plenty of mizuna, making it very satisfying.

Although it was a spicy bowl of ramen, it was so easy to eat that I found myself wanting another bowl once I'd finished, and the flavors were well-balanced.

Among all the miso ramen at "Hakata Bunpuku," this one packs a punch and is addictively delicious.

We also recommend the limited edition noodle "Morimori Cheese Miso" (1,100 yen), which is just as popular at this time of year. If you don't like spicy food, we recommend this.
