Shaved ice has now been started at a Japanese cafe in Shimokawabata-cho, Hakata Ward, Fukuoka City!

"Hino Sabo Hakata Riverain Store" (Shimokawabata-cho, Hakata-ku, Fukuoka City), a specialty store with a cafe and selling home-roasted roasted green tea and blended tea

"Hino Sabo" is a specialty shop selling home-roasted roasted green tea and blended teas located on the second basement floor of "Hakata Riverain Mall", which is directly connected underground from Nakasu-Kawabata Station on the subway. Its cute logo depicts "fire", "tea drops", and "leaf veins".

Apparently, the taste of tea can be completely different depending on how it is roasted, even if it is the same tea leaves. Because fire makes tea taste even better, the shop was named "Fire Tea House."

If you're lucky, you might even be able to see the tea leaves being roasted in the machine right in front of the store.

At the back of the store is the cafe space, which opened in November 2023 after renovation. It was opened with the desire to allow customers to enjoy the charms of tea on a deeper level.

The perfect balance of bittersweet and sweet! Summer-only "Deep-fried Hojicha Shaved Ice"

The item I'm looking for this time is the "Deep-fried Hojicha Shaved Ice" (1,480 yen), which was launched on May 14, 2024. It will be on sale until the end of August.

It is topped with a syrup made with plenty of home-roasted hojicha tea. To ensure that the aroma and flavor of the hojicha tea can be fully enjoyed, the syrup was perfected after many trials and errors with the pastry chef regarding the amount of tea leaves and the method of thickness.

"So that you can enjoy it until the very end without getting bored," the cake is topped with monaka (wafer sandwich) skin, roasted green tea ice cream, fresh cream, kinako (roasted soybean flour), shiratama (rice flour dumplings), and zenzai (sweet red bean soup), with granola hidden inside the ice. The change in texture is fun!

The shaved ice is topped with "Hojicha Brown Sugar Syrup Sauce" made with brown sugar from Okinawa. The balance between the bitterness of the hojicha and the rich sweetness of the brown sugar syrup is exquisite, adding even more depth to the flavor of the shaved ice.

Anyway it was delicious and I was so happy.

The shaved ice comes with a set of tea. You can choose from "Homemade roasted roasted green tea", "Sencha Kanoka", "Peach herbal tea" and "Koucha", and you can have as many refills as you like. When you have a refill, you can even change the type of tea.

The coffee is brewed right at the counter, so it's fun to watch the process.

I chose the "Peach Herbal Tea." I loved the sweet aroma and subtle sweetness.

"Three types of Japanese tea and Monaka" where you can enjoy the charm of tea

Besides shaved ice, there are many other attractive sweets. I also ordered the "Three kinds of Japanese tea and Monaka" (1,430 yen), which is also available only in summer.

The plate is topped with mochi skin, specially selected bean paste from Hokkaido, red bean paste made with dainagon amanatto beans, matcha fig, dried figs, berries, fresh cream, panna cotta (made with orange liqueur), chocolate, and kinako shiratama (roasted soybean flour dumplings). You can enjoy making your own original mochi by sandwiching your favorite ingredients. There are three sets of mochi skins, so you can enjoy various combinations.

There's also some rare pink peppercorns on the plate! Apparently, this was the suggestion of a staff member who is crazy about pink peppercorns, and was used in the presentation.

The most attractive feature of this shop is the set of three types of Japanese tea.

The first cup was the "cold-brewed Yame Hon Gyokuro," which was slowly and carefully extracted. It had a sweet taste and a refreshing flavor.

For the second cup, you can enjoy some home-roasted Shizuoka-made roasted green tea in a "Hobin" pot, which will be brewed right in front of you. The shop offers this style of serving right in front of you, with the hope that by communicating with the staff while the tea is being brewed, they will "increase your interest in tea."

The smell was so good and it made me feel happy.

The third cup was the "Beans Roasted Green Tea Stick," which contains crushed domestic soybeans. I was surprised by the slight taste that reminded me of soybean flour.

In addition to the items introduced this time, other sweets you can enjoy include the summer-only "Deep-fried Hojicha Anmitsu" (1,300 yen), the classic "Raspberry Sauce and Hojicha Parfait" (1,430 yen), "Shiratama Zenzai (Hojicha/Matcha)" (1,210 yen), and "Hojicha Financier with Seasonal Fruits" (990 yen).

By the way, the "Deep Roasted Hojicha Shaved Ice" (1,480 yen) will be 500 yen off until the end of June 2024 for "LINE friends" only (show your LINE screen at checkout).
