The sandwiches with the perfect balance of ingredients are a must! A super popular bakery where everything is delicious (Kego, Chuo-ku, Fukuoka City)
Hello. This is the Daily Bread Diary of a bread nerd living in Fukuoka who travels around Japan eating bread.
This time, we will introduce you to an extremely popular bakery located in Kego, Chuo-ku, Fukuoka City.
"Totcha Bakery" (Kego, Chuo-ku, Fukuoka City), a popular bakery whose fan base continues to grow
One of the attractions of totcha bakery is its convenient location, about a 5-minute walk from Yakuin Odori Station on the Nanakuma Subway Line, and it is a bakery that is often visited by families on weekends. Since owner-chef Akira Takahashi and his wife Emi opened in 2022, the popular store has continued to gain more and more fans.
The shop's logo painted on the wall and the wooden door are the landmarks. You can see the bread through the glass, and you're excited even before you enter the shop!
The shop has a calm and warm atmosphere, and a wide variety of breads are lined up on antique plates. It's hard to choose.
They are particular about the yeast and water they use, so you can be sure they are all delicious.
Their signature product is "familiar and simple" bread!
Their signature products are familiar and simple breads such as baguettes, croissants, and sliced bread.
Based on his experience training abroad, he has a desire to "open a restaurant that serves delicious baguettes."
This is the "Baguette Modern Long" (360 yen each), which is made using natural yeast called Levain and hydrogen water.
It takes three days from making the dough to shaping and fermenting the croissants (260 yen each) before they are ready to be sold in stores.
The bread is made using Takachiho butter and whole wheat flour. The lineup is full of unique flavors, including "Totcha Bread" (720 yen per loaf, 360 yen for 1/2 loaf), "Whole Wheat Bread" (720 yen per loaf, 360 yen for 1/2 loaf), "Kiraho Bread" (760 yen per loaf, 380 yen for 1/2 loaf), and "Raisin Bread" (756 yen per loaf, 378 yen for 1/2 loaf). Some items were already sold out when we visited that day.
Be sure to check out the savory and sweet breads that are variations on their signature items, such as the "Croissant Almond" (302 yen), the "Milk Baguette" (238 yen) which is a small baguette filled with cream and red bean paste, "Red Bean Butter" (324 yen), and "Raisin Butter Cream" (324 yen).
The shop's recommended items are the "tartines" and "sandwiches."
The shop's best recommendation is the colorful tartines and sandwiches made with seasonal ingredients on their proud campagne. The owner Akira makes exquisite bread, which is then arranged by his senior, the talented chef YUKA, who has experience as a chef at a famous restaurant.
The combinations of each dish are fantastic and exactly what I like! The more I eat the more I'm hooked.
On this day, dishes available included "Baguette Genovese" (378 yen), "Whimsical Croque Monsieur" (440 yen), "Iberian Pork and Mushroom Tartine" (480 yen), and "Potato and Tuna Curry Tartine" (410 yen).
There is also the "Whimsical Sandwich" (from 540 yen) whose ingredients and sauce change depending on the day.
Here is one example. Ciabatta with sun-dried tomatoes and perilla leaves, topped with white mold cheese, prosciutto, and plenty of fresh vegetables!
"Kimagure Sandwich" is a rare product that is not sold regularly. If you see it in a store, you're lucky!
We also offer stylish sweet breads with a spicy flavor!
Don't miss the sweet bread invented by Chef YUKA. It's spicy, tasteful, and stylish.
This is their signature "Raisin Bread", soaked in French liquid and baked with homemade cinnamon butter on top, making "Cinnamon Butter Raisin French" (410 yen).
This is the "Spiced Carrot Cake" (410 yen), a cake filled with walnuts, pistachios, raisins, and other ingredients, and made with a blend of five spices.
The spices don't hit you hard, but rather have a subtle, rich flavor that's irresistible. The balance with the lightly sweet cream cheese frosting was perfect, giving it a grown-up flavor.
"Totcha Bakery" is created by two chefs who make the most of their areas of expertise. We are looking forward to the new products coming out in spring. (Text by Mainichi Pan Nikki)
