Mizutaki is an indispensable Hakata specialty. We will introduce restaurants that are loved by tourists and locals alike.

Hakata Hanamidori Tenjin Branch (Imaizumi, Chuo Ward, Fukuoka City) is a restaurant where you can enjoy special Mizutaki using their own branded chicken, Hanamidori, in a private room.

Hakata Hanamidori is a popular Mizutaki restaurant with 10 branches in Fukuoka alone, as well as branches in the Kanto and Kansai regions. They serve their special Mizutaki using the branded chicken, Hanamidori, which is raised in-house.

This time we will be introducing the Tenjin store, which is easily accessible, just a 5-minute walk from the south exit of Nishitetsu Fukuoka (Tenjin) Station. It is located in the basement just off the south exit of this station.

In addition to counter seats facing the courtyard, which are limited to 3 groups of 2 people, there are semi-private and private room seating at the tables. Chairs for children are also available, making it convenient for families.

The delicious flavor of chicken is concentrated! Enjoy the exquisite "Mizutaki"

Mizutaki can be enjoyed in four different courses: the single "Hanamidori Mizutaki" (3,500 yen), the "Aji Course" (4,000 yen) with an assortment of prosciutto and other dishes, the "Hana Course" (5,000 yen) with appetizers and desserts, the "Kinka Course" (6,000 yen) including seasonal delicacies that highlight the chef's individuality, and the "Houou Course" (7,500 yen) (reservations required). *Orders must be made for two or more people.

I ordered the single item "Hanamidori Mizutaki." In addition to the Mizutaki, the set also came with a small side dish and mentaiko takana.

The small dish on this day was a dish made with okuto! It was refreshing and delicious.

All Mizutaki is prepared by staff, so you can enjoy it at the perfect time.

First, taste the soup alone. You can add spring onions to taste.

Mizutaki soup is made by slowly simmering chicken, so it is characterized by its slightly cloudy color. It is full of flavor and is delicious on its own.

Next up is the meat you've been waiting for.

"Hanamidori" chickens are fed special feed and raised in an open chicken coop, which means that the chicken meat has a reduced odor typical of chicken and a distinct flavor and chewy texture.

The chopped chicken thighs are cooked slowly until they fall apart easily, and are delicious even without any added seasoning!

When you add the special ponzu sauce, it's so refreshing you can eat as much as you want.

Next up was the minced meat. The staff's dexterity in rolling the meat into balls and putting it in the pot was so impressive that I couldn't help but say, "Wow, that's amazing!" It was fun to watch.

It was soft, very juicy and delicious.

Next came chicken thigh fillets, chicken liver, and chicken hearts. I was surprised to see chicken liver and hearts included! Apparently they are ground that morning, which makes them very fresh.

The chicken liver had a clean taste and was very delicious. The chicken hearts had a firm texture and were rich but light. Both cook quickly, so be careful not to overcook them.

Then comes a vegetable platter with plenty of cabbage, mizuna, enoki mushrooms, and other vegetables (the vegetables change depending on the season).

The vegetables, soaking up plenty of chicken soup, are also delicious! The sweetness of the cabbage is also brought out. I finished it in no time.

Choose from two types of finishing dishes

You can choose between champon noodles or rice porridge for the final course.

If you want to try both, you can add them to your order with the "Chanpon" (300 yen) or "Rice Porridge Set" (580 yen). I lavished myself with both dishes.

Rice porridge is made by reducing the amount of soup as much as possible, so if you are going to eat both, it is recommended to eat the champon first.

Unlike the soup you drank at the beginning, by the end of the meal the flavor from the chicken and vegetables had become very rich and deep!

It's easy to eat with the smooth noodles in one go.

This is rice porridge. Rice is added to soup after carefully skimming off the scum, then beaten eggs are poured in. Spring onions are added and it's complete.

The rice, soaked up plenty of broth, was simply delicious. Even though I was full, I felt like I could eat more.

It was also delicious with the mentaiko takana that came with the set, or with ponzu sauce or salt added.

I don't often eat mizutaki in restaurants, but when I tried it once again, I was impressed by how delicious it was and thought to myself, "I'm glad I was born in Fukuoka Prefecture."
