I'm sure there are many people who are making last-minute hometown tax donations, and this year I received salted salmon as a return gift from two places.
It's good to just grill it and eat it as is, but it can also be enjoyed in a variety of different ways...
So this time, we will introduce you to a salmon recipe that uses salted salmon and does not require any complicated seasoning. Please use it as a reference.
1: Steamed Salmon and Mushrooms with Mayonnaise and Mustard: No need to wash up
Using salted salmon means no seasoning is required. The rich flavor of mayonnaise mustard and melted cheese are perfect for a winter meal. The sourness of whole grain mustard adds a nice accent. It also goes well with white rice.
If you wrap it in foil in the morning, all you have to do in the evening is fry it in a frying pan! It's also recommended for a quick dinner.
[Ingredients] (Serves 2)
Lightly salted salmon・・・2 slices
Mixed mushrooms (Shimeji, Enoki, King Oyster Mushroom, etc.)...150g
Melted cheese...appropriate amount
A Mayonnaise...2 tablespoons
A grain mustard...2 teaspoons
Butter...10g
Pepper...a little
<How to make>
(1) Remove the stems from the mushrooms and break or cut them into bite-sized pieces. Put A into a container and mix together.
(2) Lay out two pieces of aluminum foil, each about 30 cm long, and spread half the butter in the center of each. Place one slice of salted salmon on each and sprinkle with pepper.
(3) Place half the mushrooms, the mixture of A, and the melted cheese on top of (2) and cover tightly (to prevent water from getting in).
(4) Place (3) in a frying pan with a lid and add about 100 ml of water (not included in the recipe). Steam-fry over low-medium heat for about 10 minutes. Add more water when it runs out.
Be careful not to add too much water to the frying pan or if the aluminum is not sealed tightly, as water will get in.
2. "Salted Salmon Acquapazza" is also recommended for Christmas and year-end parties
This dish also uses salted salmon, so no seasoning is required. Just add it to a frying pan and you've got a gorgeous dish! It's perfect for when you have a group of people over.
It produces a delicious soup that you can dip bread into or use to make pasta.
[Ingredients] (Serves 2)
Lightly salted salmon・・・2 slices
Clams・・・150g
Green olives...6 pieces
Cherry tomatoes...6 pieces
Parsley (chopped) - appropriate amount
Olive oil...1.5 tablespoons
Garlic...1 clove
Rosemary (dried) - a little
Water...50ml
<How to make>
(1) Remove the sand from the clams. Peel and crush the garlic.
(2) Add 1 tablespoon of olive oil, garlic, and salmon to a frying pan and place over medium heat. Brown the salmon on both sides (it's okay not to cook it all the way through).
(3) Add the cherry tomatoes, green olives, rosemary, and water, cover, and simmer for about 5 minutes. Add the clams and continue cooking until the shells open.
(4) Place in a serving bowl, drizzle 1/2 tablespoon of olive oil on top, and sprinkle with parsley.
Broccoli is also delicious this time of year, so add it in too.
It is possible to desalt clams and freeze them. This is highly recommended as you can use them easily even in small quantities.
