Some brands will be making their first appearance! Popular Kyushu shops appear one after another in the "Kyushu Pastry Chef Relay"
Daimaru Fukuoka Tenjin store has a wealth of information on Fukuoka and Kyushu, thanks in part to the activities of the "Kyushu Exploration Team" which aims to uncover hidden charms throughout Kyushu.
This year, we are focusing on pastry chefs. We are introducing noteworthy shops found in each prefecture of Kyushu in "Sweets Journey in KYUSHU."
This October, six shops will take to the stage in a relay format every few days starting from Wednesday, October 4th in the "Kyushu Pastry Chef Relay" event space on the B2 floor of the main building of Daimaru Fukuoka Tenjin store.
[October 4th (Wed) - 6th (Fri)] Doble K "Creamy Cheesecake"
After five years of training in France, Kanako Baba has served as head of the Western confectionery department at five-star hotels in Dubai and Barcelona. In addition, she has won numerous awards in competitions, including the Gold Award in the Western Confectionery Category at the 45th National Skills Olympics. She opened DOBLE K in 2021 in her hometown of Kumamoto City. The cakes and baked goods, which mainly use ingredients and chocolate from Kumamoto Prefecture, have been highly acclaimed and the shop has quickly become popular.
The highlight is one of their signature items, the Creamy Cheesecake (486 yen).
A smooth cheese cream made with plenty of vanilla beans is baked on top of a crunchy cookie dough. It is topped with vanilla whipped cream and lemon powder from Kumamoto Prefecture to add a little sourness. Once you try it, you'll be a fan.
[October 7th (Sat) to 9th (Mon, Holiday)] BLUE PRINT "Tart"
Located near Shinanbashi in Nagasaki City, BLUE PRINT is a patisserie lounge that serves authentic French pastries made with carefully selected ingredients and traditional methods, and has been attracting attention since its opening in December 2022.
They focus on "sweets that can be enjoyed by the five senses (bitter, sour, salty, sweet, and umami)," and among them, the "tarts" (650 yen each) are definitely worth checking out. They have a variety of tarts, including the pear tart "Tarte Poire," the griotte cherry and pistachio "Griotte Pistache," and the apricot and pistachio "Tarte Apricot Pistache."
The aroma of baked fruit, the crispy texture of the tart, and the moist almond cream are an irresistible combination!
[October 10th (Tue) - 13th (Fri)] Mix & Blend "Nagasaki Castelline"
Nagasaki Castelina (2,700 yen per piece), a new standard Nagasaki souvenir, is produced by Mix & Blend, a sweets brand by Tanakaya, a local trading company in Nagasaki City. It is a new texture dessert that combines castella with egg terrine!
The idea was conceived by Chef Nabeta Yukihiro, who served as captain of the Japanese team at the Coupe du Monde de la Pâtisserie 2011, an international competition in which pastry chefs compete in team matches.
The main ingredient is Nagasaki's brand of eggs, "Taiyo Eggs," known for their rich, sweet yolk and deep flavor. By baking the eggs slowly and carefully at a low temperature, we have achieved two completely different textures, "fluffy" and "thick and creamy," in one dessert.
Each flavor complements the others and blends together, providing a surprise with every bite.
As each piece is handcrafted by a pastry chef, they are available in limited quantities.
[Saturday, October 14th to Tuesday, October 17th] PATISSERIE LUNAMIENCE "Tankan Chocolat Tigre"
PATISSERIE LUNAMIENCE is located in Kanoya City, Kagoshima Prefecture. With the concept of "For the smiles (miracles) that come from passion," the shop sells about 60 types of cakes, baked goods, chocolates, and more that make use of seasonal ingredients. In addition to being delicious, the shop is loved by the local community for its lineup and store design that is designed to be enjoyed by people of all ages, as well as for hosting confectionery classes.
Our top recommendation is the "Tankan Chocolat Tigre" (280 yen).
The shop uses tangerines and passion fruit, local specialties of Minami Osumi Town, where the predecessor of the shop, Shinseido, a confectionery shop founded in 1924, was located. Whole tangerines are made into a paste and kneaded into a chocolate dough, which is then baked and topped with chocolate made with passion fruit.
The moist dough with a refreshing citrus scent goes perfectly with the sweet and sour passion chocolate. It's a flavor you'll want to eat again and again.
[October 18th (Wed) - 20th (Fri)] Ange Coco "Apple Pie"
When talking about patisseries originating from Tosu City, Saga Prefecture, the first name that comes to mind is the famous shop "Ange Coco."
The cute buildings and gardens, which resemble those found in a rural French town, are also a hot topic as they give off an extraordinary feeling.
There will also be some seriously delicious fresh cakes on offer...
The top recommendation this time is the shop's very popular "Apple Pie" (432 yen per piece). It is served freshly baked!
It's a little different from the apple pie you usually imagine, as it's a buttery pie filled with a butter cake-like dough and plenty of apples.
The contrast between the crispy pastry and the moist texture inside is irresistible. It's very satisfying.
[Saturday, October 21st to Tuesday, October 24th] Rond-Point "Walnut and Salted Caramel Roll / Croquant"
Located in Higashi-ku, Fukuoka City, Rond-Point is a shop that sells European-style pastries and stone-baked bread made by a chef who trained in France. The shop has now become known throughout the country.
The best recommendation is the "Croquant" (290 yen, front of the photo below), a new type of pastry made with layers of folded Danish dough, baked with walnuts and cashew nuts. The crunchy and crunchy texture is so good! The harmony of the fragrant nuts and butter will make you feel happy.
Another recommended item is the ever-popular "Walnut and Salted Caramel Roll" (1,850 yen, back of photo above).
The rich salted caramel cream made with salt from Guérande is wrapped in a thin cake and topped with a generous amount of sugared walnuts.
It's not too sweet, perfect for adults, and you can eat as much as you want. The texture of the walnuts adds a nice accent to the flavor.
DOBLE K, BLUE PRINT, Mix & Blend, and PATISSERIE LUNAMIENCE, which Higuchi fell in love with at first sight on social media and aggressively pursued, are apparently making their first appearance at Daimaru.
"Each brand will bring plenty of other attractive products in addition to the ones we've picked out this time! Everyone is very enthusiastic to fully convey the appeal of their products. This is a rare opportunity to speak directly with the pastry chefs, so I hope you'll come to the store and ask them about the appeal and attention to detail of their products."
A dreamlike 21 days where you can get delicious sweets from all over Kyushu in Tenjin. Check the availability period of each store and be sure to stop by. (Text/ARNE Editorial Department)
