This time, we will introduce a Jiro-style ramen restaurant created by a Japanese chef that has opened in the Kokura area.
A new restaurant that's attracting attention for its "Jiro-style ramen" made by a Japanese chef! "Kitakyushu Butamen Kyomachi has a hermit crab." (Kyomachi, Kokurakita Ward, Kitakyushu City)
Kitakyushu Butamen Kyomachi Yadoka Mita opened on September 7, 2023 in Kyomachi, about a five-minute walk from JR Kokura Station.
This is a sister store of "Kitakyushu Butamen Yadori Tsuzuketemasu" in Kajimachi. The store has a very good reputation, so we were looking forward to the opening of this second store!
The second store, "Kitakyushu Butamen Kyomachi Yadori Machi", has counter seats, making it perfect for those who want to enjoy a quick meal!
Jiro-style ramen has a strong image, but "Kitakyushu Butamen Kyomachi Yadokari Machi" serves "light Jiro-style ramen" made by a Japanese chef.
It's a Jiro-style ramen that is punchy in flavor, yet healthy for your body, and is made with the delicate techniques of a craftsman to pursue both health and deliciousness.
You can create your own favorite flavor using the order sheet!
A system where you order your favorite menu item at the ticket machine and then fill out an order sheet.
You can choose from six levels of "vegetables," "garlic," and "oil," ranging from "more" to "none."
You can also choose to have "caramelized" - which adds more sauce to enhance the flavor - with or without it.
Hand the order sheet to the staff and your order is complete!
First, try this! The classic "Buta Ramen"
The first thing we recommend for first timers is the classic "Buta Ramen." They have two types: "Large Buta Ramen (300g noodles)" (900 yen) and "Small Buta Ramen (200g noodles)" (800 yen).
This is a very filling bowl of ramen containing vegetables, wood ear mushrooms, back fat, seasoned fat, roasted pork, and spring onions.
This time, I ordered the "Small Pig Ramen (200g noodles)" and added "Quail" (4 pieces, +100 yen) as a topping.
When you lift the noodles, you will see that they are thick.
These special homemade noodles are made in the noodle room inside the store.
They also use whole wheat flour to be gentle on your body. The noodles are left to rest for a day after being made, making them chewy and extremely satisfying!
The soup is made almost entirely from pork and takes a long time to prepare, giving it a rich flavor.
It's rich yet light, and the deliciousness lasts until the very end!
The back fat is apparently cooked for a long time to ensure that all the fat is removed.
Although it contains a generous amount, it doesn't feel heavy and can be enjoyed lightly.
Many considerations had been given to ensure that the bowl was neither greasy nor heavy until the very end.
It comes with plenty of pork slices, and the meaty flavor is irresistible!
Also, the "Obuta Ramen (300g noodles)" which is topped with extra vegetables, back fat, garlic, etc. is very impressive! It's so good that cheers erupt the moment it comes out.
This is the true taste of Jiro!

This time I ordered "Mazesoba". The amount of noodles was 200g for "Small Mazesoba (see photo below)" and 300g for "Large Mazesoba". It was topped with wood ear mushrooms, green onions, dried seaweed, seasoned fat, shredded pork, garlic, and egg yolk.
The rich, deep pork bone soup and noodles in this mazesoba are as delicious as a hearty carbonara.
The chewy thick noodles are mixed with the soup and various ingredients, and the flavor changes with every bite. It's very satisfying!
This is a drink that you'll definitely become addicted to.
