This time, we would like to introduce a hidden gem of a bagel specialty store that started selling online in March 2023 and began selling in stores in April.

A hidden gem in a residential area! Take-out bagel specialty store "PUG BAGEL Works" (Tajima, Jonan Ward, Fukuoka City)

PUG BAGEL Works is a bagel specialty store located in a residential area of Tajima, Jonan Ward, Fukuoka City.

The shop's cute exterior is its landmark.

The owner's wife loves bagels and started making them during the COVID-19 pandemic, and to date she has made around 300 different kinds of bagels.

When you enter the store, you'll see about 10 to 12 different kinds of bagels lined up.

In addition, on Thursdays, in addition to bagels, two or three types of bagel sandwiches are sold.

Bagel sandwiches are sometimes sold on days other than Thursday, so be sure to check the shop's Instagram.

The bagels here are made using whole wheat flour and rice flour from Itoshima, as well as sake lees from a local sake brewery, and the dough is matured for a long time using natural yeast, before being carefully baked one by one.

Made with a unique blend of strong flour, rice flour, and sake lees, each bagel has a chewy texture.

We recommend eating the simple bagels as is to enjoy their aroma, or with a spread (80g: 300 yen, 120-130g: 450 yen).

There are five types of spreads: "Pepperoni cream cheese," "Pistachio cream and cranberry chocolate," "Nut and fruit cream cheese," "Anko shop's Dainagon and Takachiho fermented butter," and "Fig and Tokachi Ogura bean paste."

Yame black tea (290 yen)

The aroma of Yame black tea is amazing! The flavor is simple, so it's also recommended to eat it with your favorite spread.

Bacon Basil Tomato (480 yen)

This bagel is perfect for lunch, as the aroma of basil will whet your appetite. It is stuffed with thick slices of bacon.

Lemon peel and high cacao (440 yen)

This bitter bagel is made from cold-brewed coffee beans from COFFEEMAN, a coffee shop in Ropponmatsu that roasts its coffee in-house, which are ground in-house and kneaded into the dough.

The addition of lemon peel gives it a refreshing summery taste.

Ankoya's Dainagon and Takachiho Fermented Butter (370 yen)

The perfect bagel for dessert.

The butter melts into the generous amount of bean paste, and when eaten with a bagel it's incredibly satisfying!
