When talking about Fukuoka specialties, you can't leave out "Motsunabe." This time, we will introduce a restaurant that is getting a lot of attention for its light and innovative soup.

"Motsuya Suisei" is a creative izakaya that serves a variety of "motsu dishes" (Yakuin, Chuo Ward, Fukuoka City)

"Motsuya Suisei" reopened on May 1, 2023.

This is a creative izakaya where you can try a variety of offal dishes, including their signature [Seared Wagyu Beef Offal Hotpot].

It is located on the second floor of a building about a five minute walk from Yakuin-Odori Station on the Nanakuma Line of the Fukuoka City Subway.

The restaurant has two tables and two sunken kotatsu tables. There are also seven counter seats, making it an easy place to stop by even if you're alone.

They also have a wide selection of alcoholic drinks, and the store manager is particularly particular about the sake he purchases, personally selecting only those he has carefully selected.

They have soy sauce and miso, but the must-try is the innovative "Yuzu Salt Motsunabe"!

A must-try dish at Ikisei is the extremely popular "Grilled Wagyu Beef Motsunabe" (3 types, 1,600 yen per portion).

We only use carefully selected Wagyu beef offal from Kyushu.

After carefully preparing the offal to remove the unpleasant fat, the meat is then grilled, bringing the delicious fat to the surface, doubling its tastiness! It enhances the aroma and richness, creating a deep, exquisite flavor.

They also have the standard "soy sauce" and "miso" flavors, but the shop's recommended flavor is "Yuzu Salt." This was my first time trying it, so I decided to order it.

It's piled high with cabbage and Chinese chives! The Chinese chives are topped with a layer of yuzu peel for added accent.

Shortly after lighting the fire, the aroma of yuzu begins to spread, and you'll be overcome with the urge to eat it right away.

The offal is seared so it has no strong flavor and is very tender.

It's light and not too heavy, so easy to eat!

Even just drinking the soup was very delicious.

The final dish is something unexpected!

When you think of a way to finish off a hotpot meal, you probably imagine champon or adding rice to make rice porridge, right?

The most recommended dish at "Suisei" is none other than "Soba" (300 yen)!

Apparently it was born out of curiosity, wondering "What would happen if I put yuzu salt in soup?"...and it turns out it's delicious!

It's so delicious that it would be great to have it on the menu at a soba restaurant. Apparently, many customers ask for seconds.

Other than that, there are the classic "champon" and "ramen" (300 yen each), as well as "zosui" and "tomato cheese risotto" (500 yen each).

On this day, the appetizer served was "Homemade Smooth Tofu" (the appetizer is 350 yen, but if ordered alone it is 660 yen).

It's bouncy and super smooth! It has a texture that will completely change your perception of tofu. It's a must-try delicacy.

This is the staff recommended "Stylish Potato Salad" (550 yen).

In fact, no mayonnaise is used! It's apparently a closely guarded recipe.

It was creamy, rich and delicious.

This is the extremely popular "Charcoal Grilled Offal" (880 yen).

The charcoal-grilled offal, crunchy bean sprouts and Chinese chives are addictive and you won't be able to stop eating them ♡

There is a wide variety of skewers, and they are reasonably priced, starting at 190 yen. The chef's choice platter comes with 5 to 20 skewers (1,000 to 3,600 yen).

The photo below shows, from the top, the rare cut that connects the heart and liver, "Kokoro nokori" (200 yen), "Hatsu" (190 yen), and "Kimono" (190 yen).

There is also a "4-piece motsuku skewer platter" (1,100 yen) that includes whole intestine, fatty tuna, pitcher, and Wagyu beef hanging tenderloin.

Other attractive menu items included "Seared Offal Stew" (880 yen) and "Stir-fried Offal with Miso" (880 yen).

This is a recommended restaurant for both tourists from outside the prefecture and locals.
