This time, we asked Nishikawa to teach us how to freeze and preserve vegetables, which can help shorten your daily cooking time.
Nishikawa's recommended technique: "Wrap & Zip"
The recommended technique is "wrap and zip"! As the name suggests, wrap the vegetables in Saran Wrap (R) and then place them in a Ziploc (R) freezer bag, remove the air, and freeze.
By saving time, you can create new time and have more free time, which is what you call "jisan" (time saving).
"Wrap & Zip" is recommended especially for foods with strong odors! Not only does it prevent odors from escaping, it also keeps ingredients fresh, keeps the freezer tidy and prevents food waste, and if you prepare food and freeze it, it saves time when you need it... it has many benefits.

How to freeze and preserve lotus root
(1) Peel and cut into desired sizes, soak in vinegar water (or water) for about 5 minutes, and then wipe off the water.
(2) Wrap each portion in plastic wrap to make easy-to-use portions, place in a freezer bag, remove as much air as possible, zip it up, and store in the freezer.
*If you want to use it all at once, you can put it directly into a freezer bag!

Defrost by heating, for example by frying in a frying pan while still frozen.
It can be used in kinpira, sweet and sour pickles, tempura, etc.
You can also cut it into large pieces and freeze it to make stews with a chewy texture, and if you freeze it in a chunk without cutting it, you can grate it while it's still frozen and use it to thicken soups.
Broccoli freezing technique
(1) Divide into small pieces, boil in boiling water for 30 seconds, drain in a colander, cool in a fan or quickly cool under running water, and wipe off the water thoroughly.
*Boiling time should be very short, no more than 30 seconds!
(2) Wrap them in plastic wrap in easy-to-use portions, place them in a freezer bag, remove as much air as possible, zip it up, and store in the freezer.

Boil briefly or defrost slightly in the microwave.
Just boil it for about 10 seconds in plenty of boiling water while it's still frozen, then drain it off and it's ready to use. It will cook even in the residual heat, so the key is to boil it really quickly!
When using it in stir-fries or stews, it is best to thaw it in the microwave until it is still cold before using it.
How to freeze and preserve radish
(1) Peel and slice into 3-4 cm thick slices. Wrap each one in plastic wrap, or cut into bite-sized pieces depending on the purpose and wrap each one in the amount you will use.
(2) Place in a freezer bag, remove as much air as possible, zip it up, and freeze.

Use frozen food in stews and other dishes, then thaw by heating.
We also recommend grating it into "daikon radish" for storage! The key is to grate it finely using a fine grater.
It is said that it is best to avoid defrosting grated radish in a microwave or under running water as this can result in a bitter or spicy taste.

Leave at room temperature for about 10 minutes to partially thaw.
The trick to enjoying it is to not defrost it too much, but until it becomes like a sorbet.
