A store specializing in Malatang, the medicinal glass noodle soup that has become a nationwide hit, has opened on Tenjin Nishidori Street in Fukuoka!
Opening on February 12th! The popular Tokyo restaurant "Chipao Malatang Tenjin Nishidori Store" (Daimyo, Chuo-ku, Fukuoka City) has arrived in Kyushu for the first time.
"Chipao Malatang Tenjin Nishidori Branch" opened on February 12, 2025. It is located on the first floor of "Nishitetsu Grand Hotel", about a 5-minute walk from Nishitetsu Fukuoka (Tenjin) Station and Tenjin Station on the Subway Airport Line, making it easily accessible.

Shippo Malatang is a Malatang specialty restaurant that was established in Shibuya, Tokyo in 2007. It currently has many branches, mainly in the Kanto region.
The biggest attraction is the secret soup that will become addictive once you try it! The soup is made by slowly simmering chicken and pork and contains more than 30 types of medicinal spices such as white fermented soybean paste, cinnamon, Sichuan pepper, and Monk. The founder discovered malatang in Singapore and studied it while eating at more than 200 restaurants in China, and he has refined the taste of the original while based on the authentic taste.

Another reason for its popularity is that you can customize your ramen to your liking with over 50 toppings, five types of noodles, six types of soup, and a spiciness level that can be adjusted from 0 to 10.
On the opening day of the Tenjin Nishidori store, there was a line of 130 people! This shows how much attention it is receiving.
Shop atmosphere and ordering process
The interior of the restaurant is bright and casual. There are table seats, but there are also many counter seats, so it is easy to dine alone.

To order, you add your own toppings to the base "Mala Tang (soup + glass noodles only)" (620 yen). Choose your favorite toppings from the vegetables and ingredients lined up in the refrigerated case, put them in a bowl and hand it to the staff. All ingredients are sold by weight at 3.1 yen per gram.

If you would like to add ingredients that are not in the refrigerated case, such as pork, beef, lamb, shrimp, squid, clams, coriander, mekabu (seaweed), or mozzarella cheese, you can do so at the time of payment as an "additional topping" (150 yen each).

The base soup can be changed to "Tom Yum", "Sesame Tan Tan", "Hot and Sour Soup", "Extremely Medicinal", or "Tonic Oil" for an additional 150 yen! You can also change the noodles from the basic glass noodles to "Chinese noodles", "Konnyaku noodles", "Seaweed noodles", or "Glass noodles (large)" for an additional 150 yen.
The spiciness of the soup can be chosen from 0 to 3, up to 10 (4 and up for an additional charge). You can also choose 0.5 and other levels of spiciness.

There is also a wide selection of side dishes available, including "Mini Lu Rou Fan" (450 yen) and drinks.
Let's try it♪
On this day, I ordered the base "Mala Tang (soup + glass noodles only)" (620 yen) and added ingredients. I chose the spiciness level of 1.5, which is a little spicier than the recommended level of 1.
The ingredients sold by weight include a wide variety of choices, including chrysanthemum, spinach, Chinese cabbage, white wood ear mushroom, black wood ear mushroom, young corn, quail eggs, maitake mushrooms, broccoli, asparagus, garlic sprouts, yuba (bean skin), bunmoja (bun moja), cheese tteokbokki (sausage), pea sprouts, jade dumplings, and lotus root, all for 1,038 yen for 335g.
Additionally, you can choose from the "additional toppings" (150 yen each) of "pork," "shrimp," "boiled egg," and "half-boiled seasoned egg" (total 600 yen).
The total cost was 2,258 yen...! This is the deluxe version that I chose as per my desire.

By the way, the average bill is said to be around 1,250 yen. If you choose lighter ingredients such as leafy vegetables, you can keep the bill under 1,000 yen.

First, take a sip of the soup. It's spicy yet full-bodied! The flavors of the ingredients blend in perfectly, making it delicious. It feels like the spiciness keeps increasing as you eat it, but you can't stop eating.
The glass noodles, made from sweet potatoes from Kagoshima and potatoes from Hokkaido, have a chewy and smooth texture and are delicious when mixed with the soup.

I'm also happy that the ingredients include not only vegetables but also dim sum such as "Jade Dumplings." The bouncy texture of "Bun Moja" (pictured below), a popular ingredient in Korea, has become addictive.

Garlic, chopped ginger, Sichuan pepper oil, and black vinegar are placed on the table, allowing you to enjoy different flavors.

Personally, I like black vinegar. It reduces the spiciness and adds richness, completely changing the impression!
