
[Fukuoka Miso Ramen] Worth the trip! A bowl of ramen with a rich aroma and flavor

This time, we will introduce a ramen shop in Yukuhashi City that specializes in miso ramen made in Kyushu.
"Miso Ramen Specialty Shop Misonoya Yukuhashi Branch" (Yukuhashi City) is a shop that boasts ramen made with Kyushu's oldest miso
"Miso Ramen Specialty Shop Misonoya Yukuhashi Branch" is located along National Route 201, a 5-minute drive from JR Nippo Main Line Yukuhashi Station.
This is a franchised restaurant that was opened in August 2019 by the owner who trained at Kyushu Miso Ramen Specialty Store Miso-no-ya, whose signature dish is "Miso Ramen," a combination of miso, said to be the oldest in Kyushu, and an original vegetable stock soup.

The interior is spacious and has a warm wooden feel. There are table seats and counter seats, making it easy for both individuals and families to dine in.

The biggest feature of this restaurant is that it uses the miso from Kani Shoyu, a shop in Usuki City, Oita Prefecture, which, like Miso-no-ya, was founded in 1600 and is said to be the oldest in Kyushu.
Enjoy our original miso ramen, made with a blend of multiple red and white miso pastes and carefully selected ingredients from Kyushu.

The most popular dish is the owner's recommended "Special Miso Ramen"
There are five types of ramen: "Miso Ramen" (from 700 yen), "Rich Miso Ramen" (from 800 yen), "Spicy Miso Ramen" (from 800 yen), "Miso Tamari Ramen" (980 yen), and "Shrimp Miso Ramen" (980 yen).
There are plenty of variations, including with or without char siu and with vegetables! For an additional 100 yen, you can add toppings such as char siu or seasoned egg, and there are also set menus (from +280 yen) with items like gyoza and fried chicken.

I ordered the "Special Miso Ramen" (1,130 yen), which is said to be one of the most popular dishes. It's a hearty bowl of ramen that adds toppings such as seasoned egg, meat miso, and vegetables to the standard "Miso Ramen" (880 yen).

The restaurant had written a delicious recipe that they recommended, so I followed that advice.

First, the aroma of the meat. The roasted pork slices have a fragrant aroma that's sure to whet your appetite.

The pork slices are made from rare marbled pork belly that is sourced from a limited area. They roast each slice individually for each order. There are two luxurious slices, and they are juicy and delicious!

Next, I took a sip of the soup. It was rich and flavorful, with the gentle taste of miso and the umami of vegetables! The mellow aroma of the miso was also irresistible.

The noodles are curly and aged noodles made from a blend of carefully selected wheat flour. They are chewy and easy to swallow, and when mixed with the rich soup, they are absolutely delicious.

It's also packed with crunchy vegetables such as bean sprouts, onions, corn, carrots, and chives!

Condiments such as garlic, ginger, chili pepper, and vinegar are placed on the table, so you can enjoy changing the flavor to your liking.

I added some "hachimi (honey) chili pepper" as recommended. "Hachimi" is a special seasoning made by Misonoya that combines the classic seven spices with yuzu pepper. The refreshing spiciness brought out the umami of the miso, doubling the deliciousness!

We also recommend this dish! The impressive "Char Siu Ramen"
For meat lovers, we recommend the impressive "Miso Char Siu Ramen" (1,250 yen), which lets you enjoy plenty of char siu.

The ramen was filled with large pieces of pork so much that you couldn't even see the noodles. There were about six pieces, and it was quite filling!
