This time, we will introduce a Wagyu beef hitsumabushi specialty restaurant that opened on the 10th floor of JR Hakata City Amu Plaza Hakata "Kuuten" on March 31, 2025.
Enjoy the broth! A new experience with Wagyu Hitsumabushi at "Wagyu Seihosha" (JR Hakata City AMU Plaza Hakata)
At "Wagyu Seihosha" you can enjoy exquisite dishes made with ingredients from all over Kyushu, including Wagyu Hitsumabushi.

The restaurant has a relaxed Japanese atmosphere and has 46 seats, and reservations are accepted for both lunch and dinner.

This is a part of the menu. There are eight types of "Hitsumabushi Gozen" and they use Kumamoto Akagyu beef or beef skirt steak. There are also sets with sesame mackerel and grated yam. There are also a variety of other a la carte dishes!

Hitsumabushi is often associated with eel, but this style of cuisine that makes the most of the flavor of Japanese beef is a new sensation! You can enjoy the fragrant, juicy taste of freshly grilled meat.

Four times more delicious! "Kumamoto Wagyu Akagyu Hitsumabushi Gozen"
This time, we had the signature dish, "Kumamoto Wagyu Akagyu Hitsumabushi Gozen" (3,520 yen). This dish is made by roasting Kumamoto Prefecture's Akagyu beef, which is characterized by its red meat flavor and rich aroma, and coating it in a special sauce. It is enjoyed with fluffy, sweet white rice.

The rice is topped with a generous amount of shiny, shining Akagyu beef! Just the appearance is sure to whet your appetite.

First, eat it as is. The aroma of the grill and the rich flavor of the wagyu beef will fill your mouth!

Next, add the condiments. Takana Spicy Fish Eggs), mentaiko (spicy cod roe), green onions, wasabi, nori (dried seaweed), and arare (rice crackers) are all included, so add whatever you like. The changes in flavor and texture are fun!

My recommendation is to put a soft-boiled egg on top to make it TKG style. The soft egg mixes with the soup for a mellow flavor.

Finally, pour the broth over it to make ochazuke. The gentle flavor of the bonito broth goes perfectly with the meat, and I finished it in no time.

We also recommend the "Kumamoto Wagyu Akagyu Hitsumabushi and Tempura Set Meal" (4,290 yen), which comes with a platter of crispy tempura.

In addition to Hitsumabushi, we also offer a variety of a la carte dishes that make generous use of ingredients from Kyushu.
"Sesame Mackerel" (1,100 yen) is a classic Hakata specialty! The sesame and special soy sauce sauce are perfectly intertwined with the rich flavor of the mackerel.

"Kumamoto Wagyu Akagyu Shabu-shabu Ponzu" (1,760 yen) brings out the strong flavor of lean meat with refreshing ponzu sauce and grated daikon radish.

"Akagyu" can also be enjoyed as "Grilled Kumamoto Wagyu Akagyu" (2,860 yen) or "Kumamoto Wagyu Akagyu Beef Tendon and Radish" (935 yen).
Also noteworthy is the "Seasonal Pickled Vegetables" (715 yen), which changes depending on the season. Currently, tomatoes are available.
