Dorayaki Minarai will be available on the 2nd floor of Fukuoka Airport's domestic passenger terminal building for a limited time from Friday, November 1st to Saturday, November 30th, 2024.
This shop continues to carry on the flavor of Maruju Confectionery's Dorayaki, which has been loved in Bungotakada City, Oita Prefecture for about 60 years and has won numerous awards, including the Gold Prize at the 20th National Confectionery Exposition and the Honorary Grand Prize at the National Confectionery Exposition.
The owner of "Dorayaki Minarai" is Manami Iwane. After trying the dorayaki from "Maruju Confectionery," she was impressed by the perfect balance between the sweetness of the dough and the refined sweetness of the bean paste.
However, when she heard that the owner of Maruju Confectionery was going to close the shop due to illness, she quit her previous job as a nurse and became an apprentice, saying, "I want to preserve this flavor for future generations!" As her first and last apprentice, she learned the flavor and techniques under her master, continued to study and compare dorayaki from all over the country, and opened her own shop in the fall of 2021.
They don't have a permanent store, but sell their products online and at events. They have many repeat customers, and their deliciousness has earned them a reputation.
Dorayaki only requires five ingredients: wheat, Hokkaido red beans, sugar, eggs, and honey. These are all carefully selected by the master.
The bean paste, the key ingredient of dorayaki, is made using only Hokkaido-grown red beans, sugar, and water, and is kneaded by hand in a copper pot using traditional methods. It is smooth, yet has a refreshing sweetness that retains the texture of each individual bean.
The dough that sandwiches the bean paste is hand-kneaded with a mixture that the master discovered through extensive research, and each one is carefully hand-baked on a copper plate. The dough is made by carefully assessing the conditions that change slightly every day depending on the humidity and temperature. The fluffy and soft texture and the gentle sweetness and aroma of honey will tickle your nose.

Three types of dorayaki sold out every day!
The three types of sweets available at this stall are "Minarai Dorayaki" (300 yen), "Minarai Butter Dorayaki" (400 yen), and "Minarai Yuzu Cream Dorayaki" (400 yen).

"Minarai Dorayaki" preserves the master's taste
First up is Minarai Dorayaki, a dish made by the master that made Iwane decide to become his apprentice.
It is about the size of a woman's fist, with a soft and chewy skin filled with plenty of homemade bean paste.
The balance between the soft texture of the skin and the whole bean paste with grains still intact is exquisite and delicious!
The most popular item is the Minarai Butter Dorayaki
When it was first released, Minarai Butter Dorayaki was only available during the winter season, but due to strong requests from customers it is now available year-round.
It is sandwiched with Jersey butter from Aso, Kumamoto Prefecture, which has a strong milky flavor.
I was impressed by how well the butter and the bean paste went together. As you eat it, the butter melts in the warmth of your hands, giving it a whole new flavor. I also recommend warming it up in the microwave for about 20 seconds before eating.

New for 2024! A new sensation: "Minarai Yuzu Cream Dorayaki"
"Minarai Yuzu Cream Dorayaki" was released in late April 2024.
A new type of dorayaki made with cream cheese from Kyushu and dried yuzu fruit from Oita Prefecture.
What's surprising is that it doesn't contain any red bean paste! The sourness of the yuzu adds an accent to the refreshing taste. I recommend it to people who don't like sweet things.
It's also delicious if you warm it up in the microwave for about 20 seconds before eating.
