Hello. This is Chihi Log, a casual website that provides information about Fukuoka, with a focus on gourmet food.

This time, we will introduce the counter sushi restaurant that opened on the second floor of Teru Sushi, a hugely popular restaurant in Kitakyushu that is well-known among gourmets.

The concept is "NEO town sushi and wagyu beef"! "TERUZUSHI 2nd EDITION" is more casual than the main store (Sugawara, Tobata-ku, Kitakyushu City)

Teruzushi is located about an eight minute drive from JR Tobata Station. Founded in 1964, it is now a popular restaurant visited by many people from all over the world.

"TERUZUSHI 2nd EDITION" opened on the second floor on September 12, 2024.

Based on the concept of "NEO Town Sushi and Wagyu Beef," courses using the finest ingredients and rice selected from all over Japan, including those caught in the waters off Kitakyushu, just like the main store, are available from 5,500 yen. It was started with the desire to make the taste of "Teru Sushi" more casual and enjoyable.

Here, the beloved apprentices of Takayoshi Watanabe, the third-generation owner of "Teruzushi," demonstrate their skills. He is planning to make sushi in America next year.

The sushi chef who made the sushi on this day was Kuroki, who has over seven years of experience.

By carefully preparing each carefully selected ingredient, we create the most delicious dishes.

The dish is paired with red vinegar rice. Kuroki explains, "Rice is a living thing. Its lifespan is about one to one and a half hours, so we cook it and prepare it according to the time our guests will be arriving."

A perfect reward lunch: 5,500 yen course

There are three types of menu: the 5,500 yen course (lunch only) with appetizer + 9 nigiri + tama, the 8,800 yen course (lunch and dinner) with appetizer + seared grouper + 11 nigiri + tama, and the 11,000 yen course with appetizer + seared grouper + wagyu beef + 11 nigiri + beef nigiri + tama. There are also various nigiri that can be added to the course.

Actually, I was so impressed by the taste that I went back again right away. I tried all three courses, so I'll introduce them to you. First, the 5,500 yen course, which is only available for lunch. The other two courses are also available.

Appetizer

As we visited during the change of seasons, the appetizer was packed with summer and autumn vegetables!

We were able to enjoy seasonal flavors such as okra, fried and simmered eggplant, and mushrooms.

Kiss

The first piece is "kisu" (sillago). Kisu caught in Kitakyushu is pickled in kelp.

The moment I took a bite, I was greeted with the faint scent of yuzu and felt its concentrated umami flavor.

Swordtip squid

The swordfish squid is popular at the main Teruzushi store (3rd floor), run by the third generation owner. At TERUZUSHI 2nd EDITION, it is made to have a chewy texture.

When seasoned with salt and kabosu, the sweetness of the squid really came through.

Red meat

This is tuna "red meat" that has been marinated on only one side to bring out the best in the red meat. It is served with mustard.

It was soft and melted in the mouth, and the texture was irresistible.

Toro

"Toro" is served with warm rice so that the fat can melt and the aroma can spread.

The soft, melting sweetness is enhanced by a touch of wasabi, creating a well-calculated deliciousness. I was impressed.

Gizzard shad

The rice for [Gizzard shad] is made firm so that the topping and rice become one.

It was fatty and the rich flavor filled my mouth.

Blackthroat seaperch

The texture of the "Nodoguro" is irresistible. It melts in your mouth.

What was impressive was that the skin was lightly seared.

Bonito

Towards the end of the course, bonito appears.

It is garnished with onions and finished with a sweet sauce. One bite and your mouth will be filled with happiness!

Striped jack

[Striped horse mackerel], flavored with a combination of green onions and ginger, has a refreshing taste.

It blended well with the rice and was extremely delicious.

Mackerel sushi

You can also enjoy Teruzushi's standard menu item, Mackerel Sushi.

The balance of the fatty mackerel, green onions, pickled ginger, and rice inside is perfect. The taste changes with every bite, making it irresistible!

"Tama" has the traditional taste of "Teruzushi" and is finished on the sweet side.

It was so delicious and tasty that I was happy until the very end.

miso soup

The miso soup is made using seasonal ingredients, and on this day it was full of mushrooms! It has a soothing flavor.

"8,800 yen course" where you can taste Teru-zushi's specialty grouper

The "8,800 yen course" includes the same contents as the "5,500 yen course" plus one of Teruzushi's signature dishes, "Kue" sashimi and nigiri, as well as "Turban shell nigiri."

The thick, fragrantly grilled grouper meat was so delicious I can't put it into words! It almost melted in my mouth.

The "Kue Nigiri" is flavored with salt and kabosu citrus. The moment you put it in your mouth, you're hit with a rich flavor.

Turban shell

The crunchy texture of the "Sazae" is irresistible. The rich flavor of the seaweed and its crispy texture are also very pleasant.

A luxurious "11,000 yen course" featuring Wagyu beef steak and meat sushi

The "11,000 Yen Course" adds "Wagyu Steak" and "Meat Sushi" to the "8,800 Yen Course."

On this day, we used fillet of Japanese beef from Kagoshima Prefecture.

The carefully seared [Niku-zushi] has an amazing texture, as if the meat fibers are softly and gently falling apart.

It was a taste that made me want to eat it again as a reward.

A wide variety of drinks available

The drinks menu includes not only alcoholic but also non-alcoholic options.

The "Non-alcoholic Champagne" (950 yen) was a drink with such a strong aroma and flavor that it was hard to believe it was non-alcoholic.
