This time, we will introduce a restaurant that serves tsukemen and chicken white soup soba that opened on August 20, 2024.
A new restaurant perfect for solo lunches! "Tsukemen Tori Soba Inaseya" (Kyomachi, Kokurakita Ward, Kitakyushu City)
"Tsukemen Tori Soba Inaseya" opened in front of "Kokura Izutsuya" in Kokurakita Ward, Kitakyushu City. It is about a 7-minute walk from JR Kokura Station.
The interior of the restaurant is stylish and clean. There are 10 counter seats, making it an easy place to drop in even if you're alone.
First, buy a meal ticket from the ticket machine. There are so many types, it's hard to decide!
We review the signature dishes, tsukemen, chicken white soup soba, and rice bowl menu items!
This time, I ordered their specialty tsukemen, chicken white soup soba, and a rice bowl dish that caught my eye!
Rich seafood tsukemen
First, let's start with the tsukemen, one of the restaurant's two signature dishes.
This time, I ordered the "Rich Seafood Tsukemen" (950 yen) and the "Special Rich Seafood Tsukemen" (1,250 yen) which comes with a seasoned egg and extra pork.
The noodles arrive in an ornate bowl, and the dipping sauce is brought to you in a clay pot with a bubbling sound, whetting your appetite.
Inside the store, they introduce the "official way to eat" the noodles, which you can try first with just the noodles as is, then with seaweed salt or kelp vinegar, and finally with the dipping sauce from the clay pot...it's a tsukemen that lets you enjoy a variety of flavors all at once!
The noodles are made from carefully selected domestic wheat. They are made with natural kansui and domestic natural salt, giving them a rich aroma!
It also contains tapioca flour, giving it an irresistible smooth and chewy texture.
The soup, which is the key ingredient in the tsukemen, has a rich flavor made by slowly simmering pork and whole chicken and combining dried sardines, dried mackerel, and dried bonito flakes.
We add aged soy sauce and fragrant homemade flavored oil to it, so you can enjoy a flavor that is somewhere between rich and light.
It was served with two types of char siu and was very filling!
There are also condiments on the table, such as chili pepper, black pepper, and dashi soy sauce, so you can enjoy even more variations in flavor.
Special creamy chicken broth soba
Another specialty is the chicken white soup soba, which comes in two flavors: "Creamy Chicken White Soba" (900 yen) and "Rich Miso Chicken White Soba" (930 yen), which uses a secret miso recipe that has been brewed for generations by a long-established brewery in Aichi Prefecture.
This time, I ordered the "Special Creamy Chicken Paitan Soba" (1,200 yen), which comes with a soft-boiled egg and extra pork slices in addition to the "Creamy Chicken Paitan Soba."
The soup is slowly made from chicken bones and meat, and is smooth, rich and creamy.
The soup is whisked just before serving to give it an even milder flavor.
The mild soup mixes with the medium-thin noodles for an exquisite taste!
The tender pork slices add a meaty accent to this smooth bowl of ramen.
I enjoyed changing the flavor with the kelp vinegar, black pepper, and chili pepper that were on the table, and finishing off with an extra bowl of rice (80 yen) to make ramen chazuke.
Egg and noodles TKM
"Tamago Kake Noodles TKM" (880 yen) is an evolved version of Kamatama, made with "Mangetsu Tamago", a brand of egg known as the miracle egg.
The rich egg yolk mixes with the chewy noodles, making it so delicious you won't be able to stop eating!
[Limited quantity] Rare char siu rice bowl
Limited quantity "Rare Char Siu Rice Bowl" (480 yen).
The rare pork slices, slowly cooked at low temperature, go perfectly with the rich flavor of the "Full Moon Egg." The tenderness of the pork slices is amazing!
The rice is "Akita Komachi," a specially grown rice certified by the Akita Prefecture Special Cultivation Agricultural Product Certification System and shipped directly from Ogata Village. They are particular about the soaking process, bringing out the maximum flavor of the rice.
