A heaping amount of deliciousness and a sense of immorality! A G-style ramen shop with a long line that's worth the trip (Tosu City, Saga Prefecture)

This time, we will introduce a "G-style" ramen restaurant in Tosu City, Saga Prefecture.
A sense of immorality and plenty of volume! Recommended for those new to G-style ramen "Yume wo Katare Tosu Main Branch" (Tosu City, Saga Prefecture)
"Yume wo Katare Tosu Main Branch" is located about an hour's drive from Fukuoka city and about two minutes by car from the Tosu Interchange on the Kyushu Expressway.
It's conveniently located along National Route 34, and there's a huge ramen sign outside the store so even first-time visitors will be able to find it easily.
There is often a line.
The company's president, Tsuyoshi Nishioka (pictured below), was working part-time at a G-style ramen restaurant in Tokyo before going independent.
He opened his first store, "Ramenso Yume wo Katare," in Kyoto in 2006. His current goal is to set up branch stores in all 47 prefectures.
This "Tosu Main Store" is scheduled to open in January 2022. There are also stores in Nagasaki and Kagoshima in Kyushu.
There are tables for two people inside the restaurant.
When you think of G-style restaurants, you probably think of counter seating, but this restaurant mainly has table seating, so many people visit in groups.
To order, first choose a menu item and purchase a meal ticket.
Sit on a chair and wait until your turn comes.
A staff member will ask you from behind the counter, "Would you like garlic?", and at this point you can make what is known as a "call" - your order for the amount of garlic, back fat, and vegetables you would like.
G-style restaurants have an atmosphere that makes it difficult to enter if you don't understand the rules, but the staff here were all very friendly and explained everything to me, so I was able to order with ease.
Great impact! Addictive "small ramen" and "soupless ramen"
This time I had the "small ramen" and the "dry ramen".
Let's start with the classic THE G-style ramen. This is the "Small Ramen with 2 Pork Slices" (1,200 yen).
I ordered less garlic, more vegetables (+100 yen), less oil, and the topping of seared pork (+150 yen).
Even though it is called a small ramen, it contains 200g of noodles, which is equivalent to a large serving compared to regular ramen (100g to 150g).
The noodles are homemade with great care, and are known as "washiwashi noodles" for their springiness and firmness.
It is made with careful consideration given to how it will mix with the rich soup.
The soup is a perfect balance of rich soy sauce and pork bone broth.
The soup of regular G-style ramen is quite salty and can make you hesitate to drink it all, but the soup here is a little mellow and has a sweet and rich taste that makes it delicious.
According to the president, the soy sauce used at Yume wo Katare is based on Kyoto soy sauce, but the Tosu main store blends in soy sauce from Itoshima, making it a perfect match for Kyushu tastes.
Also, the broth made from pork bones is thicker in the evening than in the morning depending on how much it has been boiled down, so the flavor of the soup changes depending on the time of day.Savvy regular customers apparently even adjust the time of their visit to suit their tastes.
The extremely popular pork char siu is thick but simmered until tender and falling apart.
The bean sprouts are boiled to a perfect crunchy texture, creating a fantastic contrast with the chewy noodles!
Apparently the back fat is prepared every morning, so it's very fresh and doesn't have an unpleasant flavor or feel too greasy. This is sure to be easy to eat for those who want to try G-style ramen but don't want it to be too heavy.
This is the "soupless" version (1,100 yen).
I ordered it without garlic, with normal amounts of vegetables, less oil, and toppings of "Pork Belly Cartilage" (+150 yen) and "Raw Egg" (+50 yen).
Because it is a soupless ramen, the soy sauce tastes thicker than regular ramen. In addition, the generous amount of coarsely ground black pepper on top adds a punch.
If you find the flavor a little too strong, I recommend topping it with a raw egg. It mixes well with the noodles and gives it a mild flavor, so it was a great choice.
You can enjoy it at home too!
I was so hooked on the deliciousness of G-style ramen that I purchased the "Takeout Ramen 3 Meal Set" (2,500 yen) so I could easily enjoy the restaurant's flavor at home.
*Soup, sauce, and pork slices are frozen.
I tried making it at home later!
I think it turned out pretty well for a first time ♪ (lol) And of course, it was delicious!
It's also recommended as a souvenir for your family.
Sometimes you just want to enjoy some sinful gourmet food without thinking about calories.
