[Kokura Lunch] A line before the restaurant even opens! A popular non-tonkotsu ramen restaurant that is also a hot topic on social media (Kitakyushu City)

This time, we will introduce you to a "non-pork bone" ramen restaurant in Kitakyushu city.
A queue forms even before the store opens! Stylish ramen shop "Homemade Noodles Sarutahiko" (Kyomachi, Kokurakita Ward, Kitakyushu City)
"Sarutahiko Homemade Noodles" is located in Kyomachi Gintengai, an area lined with restaurants, a five minute walk from JR Kokura Station.
There are many photos posted on social media, and it is so popular that there is a line before opening every day! It is especially busy on weekends, and when I visited on a Saturday around 1pm, I waited about 20 minutes. I recommend that you go there with plenty of time.
Enter the store through the atmospheric entrance with a noren curtain hanging.
There are table seats and counter seats, and it has a stylish cafe-like atmosphere.
More than half of the customers were women.
Free extra rice! The most popular dish is the famous "Mixed Chicken Noodles"
The specialty of this restaurant is that all of their ramen is original and non-pork bone ramen.
There were about seven different dishes on the menu, including the classic "Dandan noodles with soup" (1,050 yen) and the Italian-style "Tomato soup soba with cheese" (1,020 yen).
The most popular dish is the "Specialty Chicken Mazesoba (thick noodles)" (980 yen).
This is a new type of mazesoba that is an original arrangement of "Taiwanese mazesoba," a type of noodle dish without soup.
On top of the homemade noodles, there are plenty of ingredients, including seasoned minced chicken, chicken flakes, seaweed, mizuna, onions, Chinese chives, peanuts, and egg yolk! It looks vibrant and delicious.
Recommended toppings include "Fromage (Cheese)" (+200 yen) and "Ajiho Ran Homemade Mayonnaise" (+100 yen) (the photo below is without any toppings).
The recommended ways to eat the food are also carefully explained with hand-drawn illustrations, which is very helpful!
First, mix well with chopsticks and a spoon.
The spiciness and crunchiness of the onions and mizuna add a nice accent to the ramen. Each ingredient and egg yolk are thoroughly mixed with the thick noodles, making it delicious.
There is kelp vinegar, pepper, mala pepper, and curry spices on the table so you can change the flavor to your liking.
It's delicious as is, of course, but adding kelp vinegar makes it even more mellow, which I personally prefer.
It's so filling that even after the noodles are gone, you'll still have the toppings left over!
If you ask the staff, they will bring you a spoonful of extra rice. And it's free! It's a very nice service.

The leftover sauce and ingredients mixed with the rice made it even more delicious! I was full, but I ate it all in one go. It seems that most people ask for more rice.

The next most popular dish is the "Fluffy Chicken Soba with Cappuccino Flavor" (960 yen).
It looks just as fluffy as a cappuccino! It's sure to look great on social media.
You can also add toppings such as "Fromage (Cheese)" (+200 yen) and "Ajiho Tamago Boiled Egg" (+150 yen) (the photo below is without any toppings).
The soup, made with homemade salt koji, dried scallops, dried shrimp, etc., does not contain any food additives.
It has a light and mild taste, but the rich flavor of the dashi stock is truly outstanding.
It is topped with chicken char siu, chicken flakes, mizuna, onion, and roasted seaweed, and the chicken char siu in particular is very tender and goes perfectly with the chicken soba.
The noodles hidden under the soup are homemade, thin noodles made from a combination of domestic wheat, rye, and whole wheat flour.
The cappuccino-style soup was thoroughly mixed with the noodles, creating an amazing taste unlike anything I'd ever tasted before.
