Speaking of seasonal staples, somen noodles are easy to eat. They can be prepared in a short time, and the menu is complete with just somen noodles, soup, and condiments, which is a nice touch.

However, my family would ask me, "Again?", and I was a bit concerned about the nutritional value of having just noodles...

So this time, we will introduce you to a recipe for "arranged somen noodles" that are both colorful and nutritious. Let's increase the variety of "dipping sauces"!

1. The comforting taste of soy milk and noodle soup

Soy milk is a great source of protein. Combined with mentsuyu, it tastes like the Korean dish "Konguksu."

It is also recommended for days when you don't have much of an appetite or for breakfast.

Soy milk noodle soup

[Ingredients] (1 serving)
Somen noodles・・・1 to 1.5 bundles
Kimchi...appropriate amount
Green onion (finely chopped) - appropriate amount
Tofu (silken)・・・1/2 pack (75g)
White sesame seeds... 1 teaspoon
A Mentsuyu (2x concentrated)...2 tablespoons
A Soy milk (unsweetened)...100ml

<How to make>

(1) Boil the somen noodles according to the package directions, drain in a colander, rinse with cold water, and then rinse thoroughly in ice water.

(2) Scoop the tofu into a bowl and pour A over it. Top with kimchi, ground white sesame seeds, and green onions, and eat with somen noodles.

When eating, crumble the tofu as you go. If you like spicy food, try adding some chili oil. We also recommend topping it with a boiled egg.

2: Fresh and stylish flavor: "Tomato x noodle soup x spices"

The combination of bonito's inosinic acid and tomato's glutamic acid (*) creates an explosion of flavor! Adding just a little cumin seed to the mix instantly transforms it into a stylish flavor.

I have a feeling I'd get a lot of compliments if I served this at the end of a summer home party.

Tomato bukkake

[Ingredients] (1 serving)
Somen noodles (or any other noodles you like) - 1 bundle
Tomato...1 small (70g)
Tuna can・・・1/2 can
Mentsuyu (2x concentrated)...2 tablespoons
Salted cucumber・・・1/2
Cumin seeds... 2 pinches
Black pepper...appropriate amount
Olive oil...1/2 tablespoon

<How to make>

(1) Finely chop the tomatoes and place them in a container along with the juice, then mix with the noodle soup base.

(2) Boil your favorite noodles, such as somen, according to the package instructions, rinse under running water, and drain thoroughly.

(3) Place (2) and a few ice cubes (not included in the recipe) in a bowl and pour (1) over it. Then top with tuna and salted cucumbers.

(4) Sprinkle black pepper on top. Crush the cumin seeds with your fingertips and sprinkle. Drizzle with olive oil.

Chopping tomatoes into small pieces is easy if you use a chopper. If you don't want to bother salting cucumbers, you can just shred them as is.

If the flavor becomes too thin, add more noodle soup stock to adjust the taste.
