The head chef, Matsukiyo Takahiro, loves Fukuoka and has been visiting the city 3-4 times a year for the past 30 years. He has finally moved to Fukuoka and even started running a food stall. He is, of course, a huge baseball fan, especially a Hawks fan!

What catches your eye are the menus. There is a "Today's Starting Lineup" menu, which is a play on the team member list, and in the "Yakitori/Kushiyaki" column (220 yen each), you can see options such as "Straight (Thigh)," "Curve (Negima)," and "Shoot (Tonjiri)."

In addition to "Oden" (180 yen each), other dishes include "Exquisite Tonpeiyaki" (650 yen) and "Thick Fried Tofu with Mentaiko Mayonnaise" (650 yen).

The recommended final dish is the "Nagahama Stamina Ramen" (850 yen), an original dish inspired by Tenri Ramen from Nara. The spicy chives will whet your appetite.

"Yatai Tama-chan" opened in "Nagahama-cho Yatai Street" in June 2023. It is a food stall run by "Tamaya," a popular yakiniku restaurant with several locations in Fukuoka.

Chef Torisu Daisuke says, "Yatai are an important tourist resource for Fukuoka." That's why, if he was going to run a yatai, he decided to pursue the best possible "taste," even when it came to ramen, and he continues to research and improve his ramen even now.

"Nagahama Pure Tonkotsu Ramen" (750 yen) is a masterpiece with a clean taste, made by simmering the pork leg bones (genkotsu), skull (tokotsu), and backbone (haikotsu) under pressure. Since many people do not order extra noodles at food stalls, the thickness of the noodles and the water content are carefully selected so that one bowl will satisfy you.

Another popular menu item is the "Yaki Ramen" (950 yen), which uses the same pork bone soup. The flavor of the time and effort put into making it is apparent to customers, and now some people come to the restaurant just for the ramen and then quickly finish it off.

Also, as it is a yakiniku restaurant, the variety of meat dishes is attractive. In addition to the standard "charcoal grilled chicken" (180 yen) and "pork belly" (200 yen), there are also other dishes such as "handmade meatballs" (250 yen) and the rare "raw lamb" (580 yen). There are also "three kinds of platters" (600 yen) and "five kinds of platters" (900 yen).

There are also other dishes on the menu that tourists can enjoy, such as the "Oden" (170 yen each) shown in the photo, which uses "ago dashi," a broth typical of Fukuoka, "Iwashi Mentaiko" (680 yen), and "Mentaiko Cheese Omelette" (880 yen).
