It's the season when raw wakame and mekabu are delicious. Wakame is available throughout the year, but at this time of year you can get fresh raw wakame that is chewy and fragrant. It's low in calories and full of nutrients such as dietary fiber and minerals, so it's something you should consume frequently. (※1)
So this time, we'll introduce you to some delicious recipes for eating raw wakame seaweed that you can try this time of year.

1: Recipe for "Choregi Salad Dressing" - a delicious way to eat raw wakame seaweed
"Choregi salad" is a staple salad at izakayas and convenience stores. You can easily make it deliciously by mixing familiar ingredients without relying on store-bought dressings! You can eat lots of raw wakame seaweed and leafy vegetables.
[Ingredients] (easy to make amount)
■ Dressing
A Soy sauce・・・2 teaspoons
A Sugar...2 teaspoons
A Rice vinegar (or grain vinegar)...4 teaspoons
A. Chicken stock powder (granules)...2 teaspoons
A Garlic (grated)・・・1/4 teaspoon
Sesame oil...1 tablespoon
White sesame seeds...2 teaspoons
■ Salad
Leafy vegetables such as sunny lettuce - appropriate amount
Raw wakame (pre-boiled)・・・50g
Korean seaweed...appropriate amount
Korean coarsely ground chili peppers... appropriate amount
<How to make>
(1) Put A into a container and mix thoroughly (sugar and chicken stock cubes are difficult to dissolve, so leave it for a while to allow the ingredients to blend).
(2) Add sesame oil and white sesame seeds to (1) and mix.
(3) Soak the leafy vegetables in water until crispy. Cut the raw wakame seaweed into bite-sized pieces.
(4) Drain the vegetables thoroughly and place them in a bowl with the wakame seaweed. Top with torn Korean nori and sprinkle with coarsely ground chili pepper.
(5) Pour (2) on top and eat.
You can also add any other vegetables you have in your fridge, such as cucumbers, tomatoes, and white onions, to enjoy it however you like.
This dressing is delicious on vegetables, tofu, kamaage udon, and even as a vermicelli salad.
2: I end up eating too much! Super delicious "Rice with white dashi mixed with raw wakame seaweed"
Rice cooked with white dashi is simple, very delicious, and can be easily adapted. This time, I made mixed rice with raw wakame seaweed.
Children will love the taste and gobble it up in no time.
[Ingredients] (Serves 2-3)
White rice・・・2 cups
White soup stock・・・30ml
Fresh wakame (boiled)・・・100g (10g if using dried)
White sesame seeds... appropriate amount
<How to make>
(1) Wash the rice and soak it for 30 minutes. Drain it in a colander and place it in the inner pot of the rice cooker. Add the white dashi and add up to 2 cups of water (if using a pot, add 370ml of water and cook).
(2) Cook rice as usual.
(3) Chop the fresh wakame (if using dried wakame, soak it in water, drain it, and chop it).
(4) Mix (3) into the cooked white rice.
Just by adding white dashi to rice and cooking it, the rice becomes a side dish. In addition to mixing in wakame seaweed, it is also delicious with tempura musubi, egg on rice, and grated yam rice. This time, I used Kubara's white dashi.
