Only two ingredients! Two delicious rice recipes you can make with what you have in your fridge
Hello. I am Ayumi Nakaganji, a chef.
Takikomi gohan is convenient when you don't have many dishes to prepare. It's also very helpful during times like spring break.
This time, we will introduce two recipes for rice dishes using seasonal new potatoes. These are all ingredients that you probably already have in your fridge, so please give them a try.
There are some tips at the end of the article so be sure to check them out.
1: It's so delicious you'll end up eating too much! "Western-style rice with new potatoes and sausages"
Cook fresh new potatoes into rice.
The aroma of new potatoes combined with the delicious flavor of sausage makes this a dangerous dish that will have you eating the whole cup by yourself before you know it!
Ingredients (serves 3-4)
Rice・・・2 cups
New potatoes・・・200g
Sausages...6 pieces
Consomme (granules)...2 teaspoons
Butter (salted)・・・30g
Salt...a little
Black pepper...appropriate amount
A little dried parsley (if available)
<How to make>
(1) Wash the rice and soak it for 30 minutes. Drain it in a colander and place it in the inner pot of the rice cooker. Add water up to 2 cups (if using a pot, add 200ml of water for each cup). Add the consommé and mix well.
(2) Wash the new potatoes thoroughly with a scrubbing brush, cut them in half with the skin on, and then cut them into 1 cm half-moon shapes. Cut the sausages into 1 cm round slices.
(3) Place (2) on top of (1) and cook.
(4) Once cooked, add butter, salt and mix thoroughly. Serve in a serving dish and sprinkle with black pepper and dried parsley.

The fluffy potatoes and crunchy mentaiko. When you eat it on hot rice with butter, yes, it's a winner. It's so delicious that you can't stop eating it...
Even children will gobble it up.
Ingredients (serves 3-4)
Rice・・・2 cups
New potatoes・・・200g
Mentaiko...1 to 1.5 bellies (100g)
Green onion (finely chopped) - appropriate amount
Butter (salted) - appropriate amount
A White dashi stock・・・1.5 tbsp
A Sake・・・1 tablespoon
<How to make>
(1) Wash the rice and soak it for 30 minutes. Drain it in a colander and place it in the inner pot of the rice cooker. Add ingredients A and add water up to 2 cups (if using a pot, add 370ml of water).
(2) Wash the new potatoes thoroughly with a scrubbing brush, cut them in half with the skin on, and then cut them into 1 cm half-moon slices. Cut the mentaiko into 1 cm slices as well.
(3) Place (2) on top of (1) and cook.
(4) Once cooked, mix everything together. Transfer to a serving dish, top with about 5g of butter, and sprinkle with green onions.
New potatoes have thin and soft skin, so you can cook them with the skin on. The skin also gives off a nice flavor. Be careful not to cut them too large, as they may not cook all the way through. If you use regular potatoes, peel them before using.
The key to cooking takikomi gohan well is to soak the rice properly. If you remember this, you will have almost no trouble. If seasonings are added, the osmotic pressure will be high, which will prevent the rice from absorbing the water. Be sure to soak the rice in water. (Text by Chuganji Ayumi)
