Ayumi Nakaganji: Quick and easy chicken char siu made in the microwave

You can make these even when you're exhausted! Two delicious "lazy meals" that require few ingredients and are quick to make.

Hello. I am Ayumi Nakaganji, a chef.

April is the month when new lives begin. Many people find themselves living hectic lives with little time to prepare meals due to changes in their own or their family's circumstances.

So this time, we will introduce some easy recipes with few ingredients and time saving that you can make even when you are exhausted. It is also recommended for those who are cooking at home for the first time.

1: Ready in 10 minutes! "Curry-flavored Tonpeiyaki" without egg rolls

To begin with, I don't really like rolling eggs for things like omelet rice. To release the tension of wondering if I can roll it properly... I made the eggs into fluffy, runny scrambled eggs to lower the hurdle, making this a quick and easy lazy tonpeiyaki.

Adding curry powder makes it even more compatible with the sauce. Great for when cabbage is in season.

[Ingredients] (Serves 2)
Cabbage・・・1/4 head
Thinly sliced pork・・・100g
Eggs...3
Okonomiyaki sauce (or tonkatsu sauce if not available) - appropriate amount
Curry powder...1/4 teaspoon
Mayonnaise...appropriate amount
Dried bonito flakes...appropriate amount
Green laver (optional) - appropriate amount
Pickled ginger (optional) - appropriate amount
Salt and pepper...to taste
Salad oil... 3 teaspoons

<How to make>

(1) Shred the cabbage (a rough guideline is to have a mound that fits in the palm of your hand). Crack the eggs into a container, add a little salt and pepper, and mix.

(2) Add 1 teaspoon of oil to a frying pan, add the pork and a little salt (not included in the recipe). When it is about 70% cooked, add the cabbage, salt, pepper, and curry powder and stir fry for about 1 minute. When it is soft, serve it on a plate.

(3) Clean a frying pan, add 2 teaspoons of salad oil and heat thoroughly, add the egg mixture all at once and mix vigorously from the outside to the inside, and cook until lightly cooked.

(4) Place (3) on (2), pour okonomiyaki sauce and mayonnaise over it, and top with bonito flakes, green laver, and pickled ginger.

The saltiness of the cabbage can be light, considering that you will add sauce later. It is also recommended as a way to use up a whole head of cabbage that never seems to get used up. It is also delicious if you add melted cheese to the eggs.

2: "Moist Chicken Breast Char Siu" made in the microwave

I don't feel like cooking anything anymore! This recipe is a great ally for times like that, as it allows you to make a main dish in the microwave without having to worry about it getting messy.

Can you tell from the photo? This is so moist. Chicken breast meat tends to be dry, but this one is made juicy and goes really well with rice.

[Ingredients] (Serves 2-3)
Chicken breast...1 piece (300g)
White onion・・・10cm
A Soy sauce・・・2 tablespoons
A Sake・・・1 tablespoon
A. Mirin...2 tablespoons
A Sugar・・・1/2 tablespoon
A Potato starch...just under 1 teaspoon
Mustard paste (optional) - appropriate amount

<How to make>

(1) Pierce the chicken breast all over with a fork. Cut the white onion in half and shred it.

(2) Put A into a heat-resistant container and mix thoroughly. Add chicken breast, coat with sauce, place skin side down and cover loosely with plastic wrap. Microwave at 500W for 3 minutes.

(3) Turn the chicken breasts over and cook for another minute, then leave them for 10 minutes to cook using the residual heat.

(4) Place white onions on a plate, slice the chicken breast into bite-sized pieces, and top with the dipping sauce. Garnish with grated mustard.

We recommend using chicken breasts that are not too large (around 300g) so that they cook evenly. If you are on a diet, you can remove the skin to reduce fat and make it even healthier. You can also add grated ginger juice to change the flavor.

What did you think? If you try too hard to do everything at work and at home, you'll end up exhausted, so don't push yourself too hard and take it easy! (Text by Ayumi Nakaganji)
