It's the season for delicious new potatoes. How do you eat them?

To enjoy its aroma and freshness, I often eat it stir-fried or boiled in a salad, but of course it can also be enjoyed in a variety of other ways, such as steamed or stewed.

This time, we will introduce two recipes that use a combination of new potatoes and dried small sardines.

This is a recommended recipe that is easy to remember and doesn't require any complicated steps. It's also great for consuming large quantities!

1: Crunchy texture! "Marinated shredded new potatoes and dried small sardines"

Leave the difficult task of seasoning to "seasoned vinegar." It has a good balance of sour, sweet, and salty flavors, so you can easily decide on the flavor.

This is a refreshing marinade with an addictive texture.

[Ingredients] (Serves 2)
New potatoes・・・200g (2-3 medium sized potatoes)
A: Dried small sardines...15g
A Parsley (chopped) - appropriate amount
A Seasoning vinegar・・・3 tablespoons
A Lemon juice...1/2 tablespoon
A Olive oil...2 tablespoons
Salt and pepper...a little
Vinegar...1 tablespoon

<How to make>

(1) Wash the surfaces of the new potatoes thoroughly with a scrubbing brush or similar (you can peel the skin if it bothers you), then cut them into thin strips and soak in water.

(2) Bring 600cc of water (not included in the recipe) to a boil in a pot, add vinegar, and blanch the new potatoes for 30 seconds to 1 minute (adjust the boiling time depending on the thickness of the julienne). When the potatoes start to become translucent, drain them in a colander and rinse with water.

(3) Wrap (2) in paper and squeeze out all the water.

(4) Add (3) and A to a bowl and mix. Season with salt and pepper.

You can julienne by hand, but if you have a julienne cutter, you can make it in seconds. I have many different types of julienne cutters in my house, all with different widths (laughs).

2: Also recommended as a snack! "New potato and dried small sardine galette"

This is a simple recipe where the salty taste of the cheese and dried small sardines brings out the deliciousness of the ingredients. It's chewy on the inside and crispy on the outside. You'll find yourself eating too much.

Olive oil... a moderate amount

<How to make>

(1) Wash the surface of the new potatoes thoroughly with a scrubbing brush (you can peel the skin if it bothers you), cut them into thin strips and place them in a bowl. Add A and mix well.

(2) Add olive oil to a frying pan and heat over medium heat, spreading (1) evenly over the pan.

(3) Halfway through cooking, add some olive oil around the edge of the frying pan and press down with a spatula while slowly cooking both sides until golden brown.

The potato starch is used as a binder, so it is not soaked in water. Dried shrimp or bacon are also recommended instead of dried small sardines.

By the way, the julienne cutter I used this time was a very thin one from Kai. The taste varies depending on how thin the potatoes are, so try making them at different widths. You can also use a shredder instead of a julienne cutter.
