I've never experienced such a delicious soup before♡ Ramen lovers give it their stamp of approval! A popular non-tonkotsu ramen shop (Hakata Ward, Fukuoka City)
Hello. I'm Yuri and I love ramen.
This time, we will introduce a ramen restaurant in Hakata Ward, Fukuoka City that serves delicious soup.
"Menya Suzu" (Tenyamachi, Hakata Ward, Fukuoka City) - The addictive soup made with the legendary local chicken "Amakusa Daio"
Menya Suzu is located a 4-minute walk from Exit 5 of Nakasu-Kawabata Station on the Subway Kuko Line.
This is a popular "non-pork bone" ramen restaurant that opened in September 2021.
The shop has only 16 counter seats and is a chic space with a black motif.
The purple accent wall gives the room a modern Japanese feel.
In the evening, it becomes a "sake bar" where you can enjoy delicious drinks and snacks.
To order ramen, you purchase a ticket from a ticket machine (during the evenings, all orders are taken at the table).
There are 6 types of ramen in total.
All of the soups are made with Amakusa Daio chicken, a local variety from Kumamoto.
The signature dish is the classic soy sauce ramen "Amber Soba" (860 yen).
The salt ramen "Shinju Soba" (890 yen), which allows you to taste the gentle taste of kelp and "Amakusa Daio" chicken char siu, is also very popular!
Other items on the menu include "Kamaage Soba" (980 yen), "Kakuni Soba" (1,000 yen), "Shirotan Soba" (1,280 yen), and "Motsu Karamen" (1,380 yen). For an additional 150 yen you can get a "replacement noodle", for an additional 130 yen you can get a "large serving of noodles", and for an additional 260 yen you can get a "large serving of noodles".
The menu is extensive, so you can enjoy it no matter how many times you visit.
There are many toppings available, such as "bean sprouts" (100 yen), "white onions" (130 yen), "bamboo shoots" (130 yen), "red onions" (130 yen), "leeks" (130 yen), "boiled eggs" (130 yen), and "braised pork" (250 yen), so you can arrange it to your liking.
They also have rice dishes such as "Chicken Broth Oyakodon" (720 yen), "Rice with Raw Egg" (300 yen), "Meat Rice" (390 yen), "Braised Pork Rice" (290 yen), and "Rice" (200 yen).
Elegant and delicious! "Kohaku Soba" soy sauce ramen and "Shinju Soba" salt ramen
This time we would like to introduce the signature dishes, "Amber Soba (soy sauce)" and "Shinju Soba (salt)."
The first thing that catches your eye is the beautifully designed dish! It is deep, and condiments can be added to the edge of the dish.
Apparently it was custom-made at Yozangama in Kobayashi, Miyazaki Prefecture.
"Amber Soba (Soy Sauce)" is a perfect match of sweet soy sauce and the flavor of soba noodles resembling Japanese dashi.
The soup made from Amakusa Daio chicken bones has a deep, rich flavor that is simply amazing.
The noodles are medium-thin, curly, and have an irresistible smooth texture.
They are so particular that they even take the trouble to have the noodles sourced from a noodle factory in Tokyo.
The pork slices are marinated in a liquid for three days and then cooked at low temperature.
It looks like roast pork and is extremely tender.
Let the soup soak in thoroughly before eating and you'll be in for a blissful experience!
What's also unique is that it comes with fishballs on top.
The edge of the bowl is garnished with kabosu pepper and bonito flakes, which you can mix to your liking to change the flavor.
I thought kabosu kosho would be similar to yuzu kosho, but it wasn't that spicy and the refreshing aroma of kabosu dramatically transformed the soup.
Adding some bonito flakes will give this Japanese soup an even milder flavor.
You can add garlic oil if you like.
The "Pearl Soba (Salt)" has a beautiful, clear soup that will have you falling in love with it.
Although it looks light, it has a strong chicken stock flavor and the secret ingredient of sake adds depth.
It's not overly salty, but it has a strong flavor and I've honestly never had such a delicious soup!
The pork used here is "Amakusa Daio".
As expected, the meat is cooked slowly at a low temperature, resulting in an exquisite balance of tenderness and fat.
I would want to come back just for this chicken char siu.
By the way, the owner used to work at a French restaurant in Tokyo, so it's no wonder he has such a great sense for the atmosphere inside the restaurant and the way the noodles are presented!
This is truly a one-of-a-kind ramen that you won't find anywhere else.
Both were the best ramen I've ever had, and both were truly impressive!
