Do you have any leftover seasoning vinegar, such as sushi vinegar?

For example, many people may not know that "sushi vinegar" and "rakkyo vinegar" can be used for dishes other than their intended purpose, since they are labeled "sushi" and "rakkyo." But seasoned vinegar is actually a very convenient seasoning with a good balance of sourness, sweetness, and saltiness. I often use it when making marinades and vinegared dishes. Even beginners can easily decide on the seasoning.

So this time, we will introduce some easy recipes that use seasoning vinegar such as sushi vinegar.

1: Is this soy pulp? Rich and moist "Soy pulp yogurt salad"

This salad is made with soybean pulp and yogurt, popular intestinal health ingredients, and also includes kiriboshi daikon radish. It helps maintain a good intestinal environment.

It looks like potato salad, but by using a lot of yogurt, it is moist and rich, yet light and refreshing.

Okara salad

[Ingredients] (easy to make amount)
Raw soybean pulp・・・150g
Ham...4 slices
Cucumber...1 piece
New onion...1 small
Dried strips of daikon radish (dried)・・・15g
A. Mayonnaise...3 tablespoons
A Seasoning vinegar・・・3 tablespoons
A Yogurt・・・100g
A Consomme (granules)...1/4 teaspoon
Salt...a little
Black pepper...appropriate amount

<How to make>

(1) Put the yogurt in a bowl, add the quickly washed dried daikon radish cut into 1cm pieces with kitchen scissors, and mix. Leave for at least 30 minutes to rehydrate the dried daikon radish.

(2) Thinly slice the spring onion and spread it out. Thinly slice the cucumber, sprinkle salt (not included in the recipe) all over, and set aside. Cut the ham into bite-sized pieces.

(3) Squeeze the water out of the cucumbers and add them to (1) along with the raw soy pulp and ham.

(4) Add A to (3) and mix well. Season with salt. Serve in a bowl and sprinkle with black pepper.

You can use okara raw, but if it is too moist or you are concerned about the bean smell, you can heat it in the microwave. In that case, microwave it for 1 minute 30 seconds to 2 minutes at 600W, and then let it cool before using.

If you use regular onions instead of spring onions, add salt along with the cucumber to remove the sharpness.

If you don't have seasoned vinegar, you can make your own by adding vinegar, sugar, and salt at the end.

It's good to eat it right away, but I recommend leaving it overnight, as it will make the soy pulp moister and the flavors blend together, making it even more delicious. The shelf life of soy pulp is quite short, so eat it within about 2 days.

2: Become a better cook with sushi vinegar: "Sweet and sour pickled new onions"

This is a simple marinade that you just cut, mix and season. It's a treat that can only be enjoyed during this time of year when new onions are delicious.

Fresh egg marinade

[Ingredients] (easy to make amount)
New onion...2 medium sized
A Sushi vinegar・・・100ml
A Salt...a little
A Black pepper... appropriate amount

<How to make>

(1) Thinly slice the new onions.

(2) Place the onions in a storage container and add A. Leave for at least 30 minutes.

You can easily make a marinade using sushi vinegar without having to combine various seasonings! Please eat it within about 5 days. It is also recommended to put it on grilled meat or grilled fish.

This spring-like dish is perfect for a home party. The salmon is left overnight, so the flavor is concentrated and it becomes moist and sticky.

Marinated Salmon

[Ingredients] (easy to make amount)
Salmon・・・200g
Marinated new onions... appropriate amount
Salt: 6g (3% of salmon weight)
Sugar: 6g (3% of salmon weight)
Parsley (chopped) - appropriate amount
Olive oil... a moderate amount

<How to make>

(1) Sprinkle salt and sugar all over the salmon, wrap it in paper and wrap it in plastic wrap, and leave it overnight.

(2) Rinse lightly with water and drain thoroughly using paper towels.

(3) Place the salmon on a tray, uncovered, and place in the refrigerator for about 3 hours.

(4) Thinly slice the salmon and place on a plate. Top with the marinated spring onions (including their juices). Sprinkle with olive oil and black pepper, and sprinkle with parsley.

Salmon is delicious when eaten immediately after purchase, but we recommend leaving it for a day. It will become a rich salmon that will make you exclaim, "Delicious!"
