Do you sometimes find it a little difficult to make lunch alone on weekdays? It's a pain to make it just for yourself, and you don't want to do any more washing up... but leftovers are also kind of boring. In those situations, noodles are a convenient and helpful option.

This time, we will introduce you to an easy and quick recipe for a noodle lunch for one person.

This delicious and easy to make dish will keep you going all afternoon!

1. Mentaiko Tororo Kamatama Udon: A tribute to a popular dish from a certain udon restaurant

The double egg is a blissful moment. In addition, the chewy and springy udon noodles and the fluffy texture of the grated yam are excellent.

Another great thing about this recipe is that it's quick and easy to make, and there's not much washing up to do. This recipe pays homage to a popular dish from a certain udon restaurant.

【material】
Frozen udon...1 serving
Spicy Fish Eggs ・・・1 tablespoon
Yam・・・5cm
Egg...1
Green onion (small) - appropriate amount
Sesame oil...1/2 teaspoon
Shredded seaweed... appropriate amount
Dashi soy sauce (or soy sauce) - appropriate amount

<How to make>

(1) Remove the thin skin from Spicy Fish Eggs. Peel the yam and grate it.

(2) Boil frozen udon noodles according to the package instructions, or heat them in the microwave and serve in a bowl.

(3) Place Spicy Fish Eggs, yam, green onion, egg yolk, green onion, and chopped nori on (2), and drizzle with sesame oil for flavor.

(4) When eating, mix the whole thing well and add dashi soy sauce (or soy sauce) to taste.

You can also add toppings to your liking, such as tempura flakes, sesame seeds, and green shiso. You can use either whole eggs or just the yolk, whichever you prefer. If you don't have Spicy Fish Eggs, salty dried small sardines or dried shrimp are also recommended.

Wild yam is tasty, but it is too sticky and doesn't mix well with udon, so I recommend regular mountain yam.

2: When you're tired of sauce, how about this? "Celery and beef yakisoba with fish sauce"

Celery is in season now. For many people, the only way to use it is with mayonnaise or in a salad.

So this time, I combined celery with beef, which goes well with it, to make yakisoba. Celery takes on a different flavor when heated. It has a refreshing taste that you won't get tired of eating.

Citrus fruits are a must!

Celery Fried Noodles

[Ingredients] (1 serving)
Fried soba noodles (steamed)...1 serving
Beef trimmings・・・70g
Celery: 1/2 to 1 stick (70g)
White onion・・・10cm
Sesame oil...2 teaspoons
Salt and pepper...a little
Fish sauce・・・1 tablespoon
Sugar... a pinch
Sake・・・1 tablespoon
Black pepper...appropriate amount
Citrus fruits such as lemon or kabosu... appropriate amount

<How to make>

(1) Make holes in the bag of yakisoba noodles and microwave at 600W for 1 minute 30 seconds. Cut the celery stalk into thin slices 3mm wide diagonally. Cut the leaves into thin strips. Cut the white onion into thin diagonal slices. Cut the beef into bite-sized pieces.

(2) Heat 1 teaspoon of sesame oil in a frying pan and spread the noodles. Fry the noodles without touching them too much until they become crispy in places.

(3) Move the noodles to the side of the frying pan and add 1 teaspoon of sesame oil to the remaining space. Add the beef, celery (stalk), and white onion, season with salt and pepper, and stir fry until the meat is cooked through.

(4) Loosen the ingredients and noodles, add sake and stir fry, then add the celery leaves, fish sauce, and sugar and stir fry briefly. Season with salt (not included in the recipe).

(5) Serve in a bowl, sprinkle with black pepper, and garnish with wedges of citrus.

Since you will be cooking the whole thing in one frying pan, we recommend using a slightly larger frying pan (about 26cm).
