This is the most delicious way to eat them! A recipe for enjoying steaming hot broad beans, also great as a snack
Hello. I am Ayumi Nakaganji, a chef.
Broad beans are in season from April to June. They are becoming more and more common.
Apparently, the broad beans got their name from the fact that their pods grow towards the sky. The sight of the broad beans nestled inside the fluffy futon-like pods is incredibly cute.
This time, we will introduce some recipes for fava beans. Since fava beans are a delicate vegetable that loses freshness quickly, try using them quickly in various recipes.
1: A colorful dish that will get you excited! "Rice cooked with dried shrimp and broad beans"
"Fava bean rice" allows you to fully enjoy the fluffy texture of fava beans.
The contrast between pink and green gives this rice a spring-like flavor. It will brighten up your dinner table.
Since I want to enjoy the flavor of the fava beans and shrimp, I keep the seasonings very simple and light.
[Ingredients] (Serves 2)
Rice・・・1 cup
Broad beans...about 10
Kelp・・・5cm×5cm
Dried shrimp・・・5g
A Salt・・・1/2 teaspoon
A Soy sauce・・・1/4 teaspoon
A Sake・・・1/2 tablespoon
<How to make>
(1) Wash the rice and soak it for 30 minutes. Drain the rice in a colander and place it in the inner pot of the rice cooker, adding water up to 1 cup (if using a pot, cook with 200ml of water per cup). Add A, mix well, top with dried shrimp and kelp, and cook.
(2) Make shallow cuts in the broad beans with a knife as shown in the photo and peel off the thin skin.
(3) Once the rice is cooked, remove the kelp, add the broad beans, and steam for 10 minutes.
(4) Mix everything together.
Broad beans become dry if they are overcooked, so they are heated using residual heat. This will give them a fluffy texture. Dried shrimp will absorb some water, so use the same amount of water as for regular cooking.
You can sprinkle sesame salt on it to taste. You can use any dried shrimp. Even cheap dried shrimp that you bought for okonomiyaki and don't have all the shrimp left will turn out delicious.
2: Moist and rich! The simplest way to prepare it is to enjoy it! "Baked broad beans"
A classic izakaya menu that gives you a taste of spring. Just grill it on a fish grill or a grill rack! It's an easy cooking method that results in a rich flavor because it doesn't need to be boiled.
This is the perfect snack to go with your shochu or sake! We also recommend adding your favorite salt or grated cheese.
[Ingredients] (1 serving)
Broad beans...3-4 pods
Salt...appropriate amount
<How to make>
(1) Rinse the broad beans, including the pods, quickly with water.
(2) Place in the fish grill and cook over high heat for about 12 minutes, checking the fish during cooking.
(3) Once cooked, use kitchen scissors to cut off the ends of the pods that do not contain the beans, making it easier to remove the beans from the pods, and serve on a plate. Garnish with salt.
The beans will come out easily if you push them out with your fingers as shown in the photo (be careful not to burn yourself).
The cooking takes place in the fluffy pith inside the pod as if it were steamed, so it's okay if the outside burns black.
If you don't have a fish grill, you can use a toaster.
It's delicious to simply boil it and eat it, but the recipe I introduced this time makes it even more delicious. Please give it a try. (Text by Ayumi Nakaganji)
