When it comes to ramen in Fukuoka, of course tonkotsu ramen is popular, but non-tonkotsu ramen shops have also been in the spotlight recently. This time, I went to a very intriguing "non-tonkotsu" shop that just opened.

A new restaurant with a focus on noodle and rice dishes! "Dashi and Silver Shari Chinese Noodles Toramatsu" (Usa, Minami Ward, Fukuoka City)

"Odashi to Gin Shari Chuka Soba Toramatsu" is a Chinese noodle restaurant that opened on February 16, 2024 in Uosa, Minami-ku, Fukuoka City.

There are so many things to choose from! The menu is so extensive you'll be spoilt for choice!

The system is that you purchase a meal ticket from the ticket machine and then hand it over to the staff at your seat.

The menu is extremely varied, with six types of noodles as the base, such as "Aged Soy Sauce Light Chinese Noodles" (880 yen), "Rich Back Fat Dried Niboshi Chinese Noodles" (900 yen), "Seafood Fragrant Shellfish Stock Shio Soba" (880 yen), and "Dried Niboshi Tsukesoba" (950 yen), as well as rice dishes such as "Seared Rare Char Siu Rice Bowl" (450 yen) and "Char Siu Mabushi" (380 yen)!

If you are unsure, please ask the staff. They will explain to you in detail.

On the table was a wooden tray with tips on how to eat it deliciously, as well as a soup spoon, chopsticks, a cup of cold water, and a moistened towel.

There is also kelp vinegar, dashi soy sauce, chili pepper, and Japanese pepper on the table.

We tried their signature dishes, "Aged Soy Sauce Light Chinese Noodles" and "Rich Back Fat Dried Boiled Chinese Noodles"!

On this day, we had two of their signature dishes.

Aged soy sauce light Chinese noodles

First up is the "Aged Soy Sauce Light Chinese Noodles" (880 yen).

The clear brown soy sauce soup had a surprising richness and depth of flavor upon first sip.

We use carefully selected domestic chicken with a strong flavor. In addition, we extract the flavor from seven kinds of vegetables through strict temperature control. The soup stock, which is made in this way with great care, has a mellow aroma and rich flavor!

They also take great care when it comes to soy sauce, using "re-brewed matured soy sauce" made by a long-established brewery, which "makes soy sauce with soy sauce."

Another appealing feature is that you can enjoy two types of char siu in one bowl.

First, there is the very juicy pork slices, which are cooked at a low temperature to give them a rare texture.

The other type is roasted pork slices, which are roasted over a burner. Not only does it have a nice roasted aroma, it also tastes even better!

It also contained naruto, roasted seaweed, and green onions.

Next up is the "Rich Back Fat Niboshi Chinese Noodles" (900 yen). The soup stock is made with carefully selected flavorful "Yaizu Niboshi". Chicken and vegetable soup adds richness and depth to the soup. It is then finished with lard that has been boiled slowly at low temperature for a long time to infuse the aroma of the niboshi and extract the umami.

Since it's made with dried sardines, I imagined it would have a light flavor, but it was surprisingly rich in flavor! It's a hearty drink that's recommended for those who like rich flavors.

Both types of ramen have slightly thicker noodles than the so-called tonkotsu ramen. In order to enjoy the aroma and texture of the noodles, they use "low-hydration noodles" made from carefully selected fragrant domestic wheat.

It's very chewy and satisfying to eat!

When ordering from the ticket machine, you can choose to have "extra noodles" (150 yen), but we also recommend ordering "seasoned balls" (250 yen).

This is the "Aedama" (seasoned balls), sprinkled with dried sardine powder.

You can enjoy it however you like, by adding it to soup like extra noodles or eating it like tsukemen.

A must-try silver rice dish to accompany your Chinese noodles!

There are a variety of silver rice menu items.

The specialty rice is "Akitakomachi," shipped directly from Ogata Village, Niigata Prefecture. It is characterized by its elegant fragrance and strong sweetness. They pay special attention to how the rice is cooked and soaked to bring out the maximum flavor.

There is also a set with noodles, so be sure to try that too.

The "Seared Rare Char Siu Rice Bowl" (450 yen) is a generous serving of the same excellent char siu used in the ramen, topped with a rich brand egg. This is a very luxurious bowl, with only 20 bowls available per day!

It's even more delicious if you crack the yolk and eat it!

You can enjoy three different flavors, and the one we recommend is the restaurant's specialty, "Char Siu Mabushi" (380 yen)!

Our proud pork slices are served with our specially made silver rice.

First, eat it as is, then with condiments, and finally with dashi ochazuke. It's a great menu that lets you enjoy three different flavors.

Other dishes available include "Gin Shari" (150 yen) and "Ultimate TKG" (300 yen) made with full moon eggs.

The fried chicken side dish is also recommended!

"Dashi-Fragrant Fried Chicken (4 pieces)" (560 yen) is a fried chicken dish with a crispy batter and a sweet and spicy chicken wing-like sauce. It is topped with a crunchy bonito flakes sprinkled on top.

The juicy meat juice was overflowing and it was very delicious ♡

Although I wasn't able to eat it this time, I checked out the other noodle dishes.

Seafood-infused shellfish broth and salt soba

The "Seafood Fragrant Shellfish Broth Shio Soba" (880 yen) has a light and rich soup that is a blend of domestic chicken stock, dried sardines, Rishiri kelp stock, and boiled scallop and clam stock.

Dried sardine mixed soba (with extra rice)

The "Niboshi Mazesoba (with extra rice)" (900 yen) is a luxurious bowl of noodles mixed with rich egg yolk, sharp soy sauce, and dried sardine powder. It's full of ingredients!

Dried sardine fragrant tsukesoba

The "Sardine-Fragrant Tsukesoba" (950 yen) uses medium-thin whole-wheat noodles that are chewy and made with tapioca flour. It is said to be very satisfying.

TKM Egg and noodles (with extra rice)

"TKM Tamago Kake Noodles (with extra rice)" (880 yen) is an evolved version of Kamatama Udon. It comes with lemon and is refreshing, but it also comes with extra rice, so it's very filling!
