The rich pork bone and seafood soup is intertwined! The roasted pork is also delicious! "Tsukemen" (Koga City)
Hello. I'm Yuri and I love tsukemen.
I moved to Fukuoka two and a half years ago and have completely fallen in love with Kyushu food, but before that I lived in Yokohama for over 30 years!
When I heard that the owner of one of my favorite tsukemen restaurants, who had trained there, was in Koga City, I went to pay him a visit.
Enjoy one-of-a-kind tsukemen made by a chef who trained in Tokyo! "Koga Ichimenan" (Koga City)
Koga Ichimenan is located a 12-minute walk from the east exit of Koga Station on the JR Kagoshima Main Line and a 6-minute drive from Koga IC on the Kyushu Expressway.
The owner, who trained at the famous "Tsukemen TETSU" restaurant that originated in Tokyo and is said to have started the tsukemen boom, returned to his hometown and opened a restaurant because he wanted more people in Fukuoka to know how delicious tsukemen is.
They have a store in my hometown of Yokohama, and I used to go there often, so I feel nostalgic but also excited.
The restaurant has counter seats and table seats, and is spacious and clean.
Children's chairs are also available, so you can use the facility safely even if you have small children.
You order by purchasing a meal ticket.
Koga Ichimenan is particular about using as many locally produced ingredients as possible. You can enjoy a unique tsukemen made with plenty of ingredients from Koga City, such as pork, knuckle bones, chicken bones, soy sauce, and eggs.
The menu offers an attractive lineup of dishes, including cold "Tsukemen" and hot "Atsuri" noodles (850 yen each), as well as "Spicy Curry Tsukemen" (950 yen), "Tantan Tsukemen" (950 yen), and "Mazesoba" (850 yen).
There are a variety of toppings available, such as "flavored egg" (100 yen), "scorched pork" (300 yen), "menma" (bamboo shoots) (100 yen), and "shiage scallions" (100 yen), so you can arrange it to your liking.
There is also a wide selection of side dishes available, including "Rice" (150 yen), "Koga TKG" (200 yen), "Minced Meat Rice" (250 yen), and "5 Boiled Gyoza" (350 yen).
The size of the noodles is 200g for a regular serving. You can upgrade to a large serving of 300g for an additional 100 yen, or a super large serving of 400g for an additional 150 yen. Please note that you cannot order extra noodles.
You'll become addicted to the rich pork bone and seafood soup! The exquisite "Atsumori Scorched Pork"
What we would like to introduce to you today is "Atsumori Scorched Char Siu" (1,150 yen).
The soup is made from pork knuckles and chicken bones, pork trotters and chicken feet (momiji), and a seafood soup made from bonito flakes, mackerel flakes, and dried sardines. The soup is combined and boiled down to create a rich flavor.
The boiled thick noodles are eaten with dipping sauce, just like Zaru Soba noodles.
The richness of the soup and the aroma of fish powder that fills your nose are irresistible. In addition to the char siu that comes with it, there is also char siu and bamboo shoots in the soup.
By the way, some people may not like fish powder, but the fish powder at this restaurant is not too strong, so it is rich but easy to eat!
The low-temperature cooked pork is then seared and served on a separate plate.
The noodles are made from specially ordered whole wheat flour, and have a well-balanced aroma and chewy texture.
The regular size is 200g, so it's very filling!
Complimentary toppings of apple cider vinegar, shichimi pepper, and black pepper are available on the table.
In addition, fried onions,
Bean sprouts and wood ear mushrooms too!
A service that is so typical of Fukuoka!
You can arrange it to your liking.
The soup for tsukemen is boiled down several times more than that of regular ramen, making it too thick to drink as is, but here, after you've finished your noodles, you can dilute it with some soup to make it just the right thickness and drink it, just like soba soup.
Furthermore, if the soup cools down, they will throw hot stones into the soup, bring it to a boil and serve it hot again.
While the hot stone is still on the spoon, quickly submerge it in the water.
It was so delicious that before I knew it, I had drunk it all.
Anyway, I was incredibly happy because I love tsukemen so much.
Please stop by and check it out. (Text by Yuri-chan)
