What do you eat for breakfast? Are there some of you who don't eat in the morning because you don't have an appetite?

But it seems like it's still a good idea to eat breakfast. I try to eat white rice with Spicy Fish Eggs, natto, miso soup or soup with plenty of vegetables and protein (sometimes I'll just have instant corn soup if I'm not that hungry).

This time, we will introduce a soup using soy milk that is recommended for busy mornings. It can be easily made in under 10 minutes and warms you up from the inside, so it is perfect for this time of year.

Soy milk is a great breakfast option as it is an easy way to get protein.

1: Just heat it up and pour it into a bowl! Taiwanese-style "Shake-Shake Soy Milk Soup"

This recipe is inspired by "Shen Dou Jiang," a soy milk-based soup that is a staple breakfast in Taiwan. By adding vinegar, the soy milk solidifies and becomes fluffy, creating a warm and comforting soup.

Normally, I add ingredients like coriander and pickled mustard greens to warm soy milk, along with seasonings like soy sauce, black vinegar, and chili oil, but this time I've made it simple and with fewer ingredients so it's easy to make even on busy mornings.

[Ingredients] (1 serving)
Unsweetened soy milk・・・200ml
A Black vinegar (or vinegar if not available) ... 2 teaspoons
A White dashi stock・・・1/2 tablespoon
A Dried Sakura shrimp... appropriate amount
White sesame seeds... appropriate amount
Green onion (finely chopped)...a little
Chili oil (to taste)

<How to make>

(1) Place A in a container.

(2) Heat the soy milk in a pot, being careful not to let it boil. Just before it boils, turn off the heat and slowly pour into (1).

(3) Add ground white sesame seeds, green onions, and chili oil to taste.

Be careful not to boil the soy milk too much, as it will not solidify. And be sure to use unsweetened soy milk.

2. "Chinese cabbage and soy milk soup" that warms you from the inside out

Chinese cabbage and creamy foods go well together. However, adding cream or milk can make it feel a bit heavy for your body in the morning. In such cases, try unsweetened soy milk. This soup is filling and can be made with just a few ingredients.

Chinese cabbage soy milk soup

[Ingredients] (1 serving)
Chinese cabbage・・・Appropriate amount (about 100g)
Bacon・・・20g
Soy milk・・・200ml
White dashi stock・・・1 tablespoon
Olive oil...1/2 tablespoon
Salt and pepper...a little
Black pepper...appropriate amount

<How to make>

(1) Cut the Chinese cabbage into thin strips, cutting across the fibers. Cut the bacon into 1 cm pieces.

(2) Add olive oil to a pot, add the bacon and Chinese cabbage, season with salt and pepper, and fry over medium heat.

(3) Once everything is soft, add the soy milk and turn the heat to low-medium. Heat carefully to avoid boiling, and add the white dashi.

(4) Season with salt (not included in the recipe), place in a bowl, and sprinkle with black pepper.

Shredding the Chinese cabbage will help it cook faster and shorten the simmering time.

This time I used white dashi stock as the seasoning, but it goes well with a variety of seasonings, so you can change it up depending on your mood that day by adding consomme, chicken stock powder, or dissolved miso.
