Hello. I am Ayumi Nakaganji, a chef.

During the cold season, the cold winds and heating can make your skin and throat dry.

So this time, we'll introduce you to a recipe for chicken wings that are full of collagen.

The chicken wings are reasonably priced and filling. Although they are a little difficult to eat, they make you think, "Meat on the bone is tastier!"

1. "Samgyetang-style medicinal soup" to warm up your chilled body

Just put it in a pot and simmer. It's full of the flavor and collagen of chicken wings. This soup will warm you from the inside out and help you get in shape.

[Ingredients] (1 serving)
Chicken wings・・・2 pieces
White onion・・・2/3
Dried shiitake mushroom・・・1 piece
White fungus (dried) - appropriate amount
1 tablespoon glutinous rice (or non-glutinous rice if you don't have glutinous rice)
Ginger・・・1 piece (thumb size)
Garlic・・・1 clove
Salt...1/4 teaspoon
White pepper... appropriate amount
Threaded chili peppers... appropriate amount

<How to make>

(1) Cut the chicken wings open along the bone with scissors and season with salt. Quickly wash the glutinous rice. Crush and peel the garlic. Cut the ginger into thin strips. Thinly slice the white onion diagonally. Split the white wood ear mushrooms with your hands and quickly wash them.

(2) Put 400ml of water (not included in the recipe) in a pot, break up the dried shiitake mushrooms with your hands, add the chicken wings, white onions (save a little for garnish), white wood ear mushrooms, glutinous rice, garlic, and ginger, and bring to a boil.

(3) Once boiling, skim off the scum, reduce heat to low, cover and simmer for about 20 minutes.

(4) Season with salt (not included in the recipe), sprinkle with white pepper, and garnish with white onions and chili threads.

It is recommended to season lightly and add salt when serving, and add sesame oil or yuzu pepper as shown in the picture. You don't need to soak the dried shiitake mushrooms, but you can break them off with your hands and simmer them together to save time.

You can also simmer the white wood ear mushrooms together without soaking them. White wood ear mushrooms (※1) are rich in dietary fiber and vitamin D. They are a mushroom that you should actively consume even during the dry season. In addition to the nutrients, they have a great texture, which I've really been loving lately. I also add them to miso soup.

2: Take a hearty bite! "Fried chicken wings with green onion sauce"

Since it has green onion sauce, the seasoning is light. Dip it in plenty of green onion sauce and bite into it!

【材料】(2人分)
鶏手羽元・・・6~7本
A醤油・・・大さじ1
A酒・・・大さじ1
Aにんにく(すりおろし)・・・小さじ1
Aしょうが(すりおろし)・・・小さじ1
Aブラックペッパー・・・小さじ1/4
かたくり粉・・・適量
サラダ油・・・適量
▪ねぎソース
白ねぎ(みじん切り)・・・1/2本
たかのつめ・・・1~2本
B砂糖・・・大さじ2
B醤油・・・大さじ2
B酢・・・大さじ1
ごま油・・・大さじ1/2

<How to make>

(1) Open the chicken wings by inserting scissors along the bone.

(2) Place (1) and A in a plastic bag, remove the air, and leave for at least 15 minutes.

(3) Coat (2) with potato starch and press firmly with your hands. Deep fry for 3 minutes in oil heated to 180℃ (avoid touching as the batter will come off). Remove from the oil onto a tray with a wire rack and leave for about 2 minutes to cook in the residual heat. Put the chicken back in, turn the heat up to high again and deep fry for 2 minutes until crispy, then drain well.

(4) Heat sesame oil in a small saucepan, lightly fry the white onions and the takanotsune (broken in half to remove the seeds), add B, and once heated through, turn off the heat immediately.

(5) Place the fried chicken in a bowl and top with (4) and it's done.

If you coat it in a generous amount of batter, the green onion sauce will soak in well. Deep fry it twice to make the batter crispy. Serve with plenty of sauce.

When cooking chicken drumsticks or wing tips, you may notice that the meat around the bone is red or that red liquid comes out. This does not mean that the meat is not cooked through. The meat around the bone will remain red even after cooking. If it is cooked thoroughly, there is no problem.
