I moved to Fukuoka two years ago, but before that I lived in Yokohama since I was born. I'm a true Yokohama native!
When I heard that this famous ramen restaurant founded in my hometown of Yokohama had opened in Kyushu for the first time, I went to check it out.
A popular Yokohama restaurant has arrived in Kyushu for the first time! "Hakata Hechikan" (Tenjin, Chuo-ku, Fukuoka City), a specialty restaurant for dried sardines and fresh fish ramen
Hakata Hechikan opened in May 2023 in the Tenjinkita area, a 3-minute walk from Tenjin Station on the Subway Airport Line.
Founded in Yokohama, "Hechikan" is a restaurant famous nationwide for its "Niboshi Ramen." It has seven stores in Kanagawa, Tottori, Osaka, and other areas, but has now finally made its first appearance in Kyushu.
It is also famous as a cup ramen in Yokohama, and to coincide with the opening, it is also being sold at Family Mart in Fukuoka. *Limited time sale, while supplies last.
There are only 10 counter seats inside the store.
You order by purchasing a meal ticket from a ticket machine.
The main menu items are "Jun Niboshi Chuka Soba" (900 yen), "Omar Shrimp Soba" (1,000 yen), and the daily "Limited Edition Soba" (1,100 yen). The soup is made from carefully selected dried sardines from all over the country, and fresh fish such as horse mackerel and sea bream.
The moment you enter the restaurant, you are hit with the aroma of dried sardines and lobster broth. It's a nostalgic smell for me. I think people from Fukuoka will be excited to hear that it's not the familiar smell of pork bones or chicken bones.

On this day, I ordered the signature dish, "Junboshi Niboshi Chinese Noodles" (900 yen).
The first thing that surprised me when it came out was that you couldn't see the noodles at all (laughs).
Extra large thinly sliced pork slices beautifully cover the entire bowl.
What comes out from inside are beautiful straight noodles.
It's not quite medium-thick, but it feels a little thicker than Hakata tonkotsu. It's smooth and chewy, and goes down great.
The soup, made by thoroughly boiling down dried sardines, is a cloudy grayish color.
The flavor is concentrated and quite strong, but because it is not made from animal products, it doesn't feel heavy or heavy. In fact, it even feels like it might be good for your health.
This is "Omar Shrimp Soba" (1,000 yen).
This also has a unique appearance where you can't see the noodles at all.
The chopped purple onion on top of the thinly sliced pork is a stylish addition.
The soup is extremely rich, just like the dried sardine ramen, but the added umami of shrimp makes it milder and sweeter, making it easier to drink.
It was a luxurious bowl where I could enjoy the lobster miso, meat, and shell!
By the way, you can order "Risotto as a Final Dinner" (100 yen) at night.
If you hand over a ticket for "Rice" and a bowl of ramen with a small amount of soup left in it, they will use the soup to recook the rice and make it into risotto.
This time I visited for lunch, so next time I'd like to go in the evening!
